Egg rolls or Tamago yaki is a timeless dish that is why I wanted to share this, it is one of the dishes in Teishoku meal, and a popular dish for obento or bento.
Ingredients;
4 eggs- beaten
4 tablespoon of brown sugar
1 tablespoon of water
1 tablespoon of mirin
a pinch of salt
1/4 teaspoon of dashi
TIPS for making Tamago yaki-
Prepare a wet towel, as you need to control the temperature of the pan by rubbing the pan onto the wet towel from time to time, preferably after 'rolling' (flipping) the eggs Please do watch the video for this.
** You can use the usual frying pan for this dish, but if you can get the square one, please use it.
This tamago yaki pan is a NO fail and it seems so, if you watch the video closely, you will noticed that it was actually my second round cooking it, as my mother in law can't wait, she just love tamago yaki.
- In the video because I was using the Egg roll pan, I divided the egg mixture only in 2. Try to divide the egg mixture in three, then cook it slowly rolling the egg mixture three times.
