The Kitchen is nothing short of a Laboratory- it's here where we can cook up ideas, experiment, learn and also taste our results. Egg Chops are a pretty well-known party snack in Goan homes and so I decided to try something new. Along with a quartered hard-boiled egg, I added a tangy, sweet and spicy sauce that I mixed together when I simply allowed myself to be creative. Wrap that in a mashed potato and crumby coat and what you have is a stout Egg Chop!

Ingredients:
Works best to make 8 Egg Chops
For the Potato covering:
4 large Potatoes, peeled and diced
1/2 teaspoon Salt
Water, sufficient to immerse the potatoes
Crushed Black Pepper, as desired
Red Chilli Flakes, as preferred
Some fresh, chopped Coriander
For the filling:
2 Tablespoons Chilli flakes
1 Tablespoon Garlic powder
2-3 pinches of Salt
2 Tablespoons Honey
1 teaspoon Lime juice
1 teaspoon Ketchup
2 hard boiled Eggs
For the coat:
All-purpose Flour, as required
1 Egg beaten with 2 Tablespoons Milk and some Salt
Breadcrumbs, as needed
Oil for deep frying
