I can never fit a crushed garlic in my bottom, not to mention a layer of potatoes.

Oh, this looks amazing! Thanks, Titli. I'll definitely put some cheese in between, maybe even little pieces Feta cheese? Or would that be too much? Xudahafiz!

An ideal waxy potato for this is the red skinned Désirée variety.

Get a solar set up so you don't get so upset about energy costs. But that was funny! Love the recipe, thanks.

Yummy. I love douphinious. I like them with lots of cheese. I recommend cheddar, greyer and a bit of parmesan....and lots of garlic :-P

Makes me wish I had remembered to buy potatoes.
@gaudetjaja9 жыл бұрын
I make it by adding salt, nutmeg and pepper (and also some grated garlic, though not too much) to the Cream rather than on the potatoes. The cream permeates the potatoes so that the entire thing gets seasoned.

It always surprises me how looong it takes to cook potatoes in the oven if you don't parboil them first... This looks nommy. Shall try.

I have everything but the thick cream in my house. Would it work without the thick cream? Could I use the same amount of regular milk instead? Thanks in advance!
@karljohn21459 жыл бұрын
yutaro5296 then you might want to put some cheese in it for richness
@ShalimarPerfume9 жыл бұрын
yutaro5296 You don't need cream. You can make a rue/roux/bechamel sauce on top of the stove with butter, white all purpose flour and milk.

What sort of coin are we talking about here? I assume you are not talking about the £5 coin as that isn't really used very much. Anything below the pound coin would be seemingly too thin. This leaves me with the £2 coin at a thickness of 2.5 mm or the £1 coin at 3.15mm. I would assume from watching the video that you have based your coin thickness around the £1 coin although it is hard to be sure with only a 0.65mm difference. I hope I'm being specific enough with my question

ssj9997 I used a microtome to cut my slices to a thickness of 2.758mm. This is the thickness you must achieve.

ssj9997 I used a Turk lirasi... maybe that's why mine wasn't as crunchy on top.....
So I get all excited to see what dauphinois is, then I find it is just scalloped potatoes. Well at least that is what us colonials over here in Canada call it. LOL. I make them with a homemade cheese sauce and also put thin ringlets of cooking onion in between the layers. Other variations I do are just plain with onion, left over ham with cheese and onion scallop, even thin slices of cooking carrot. If I am feeding a large crowd and need to make copious amounts of food, I have this 40 year old moulinex Titli that was made in France and it has an attachment to slice potatoes really thin and really fast and use that if I am making the scalloped potatoes au gratin = with cheese. Yeah old moulinex even has a cheese shredder blade. But if I am only making a small casserole I just hand cut the potatoes, onions, and hand grate cheese for cheese sauce and bake it in my convection toaster oven instead of the big gas oven.

***** There is a dish that you find in many restaurants near the Alps. It's called Tartiflette and is essentially gratin dauphinois with onion, cheese and bacon. Look it up!
@ShalimarPerfume9 жыл бұрын
Titlis Busy Kitchen Oh I am gonna have to try that. I don't have that reblochon cheese to make it. But I do have this cheese made in a monastery in Quebec called Oka which looks similar. Yeah I like fancy cheeses. On the weekend the hubby went to grocery store on his own and brought back these King Oyster mushrooms that I never cooked with before and well I do know how to make real cream of mushroom soup so that is what happened. 8 - 1/2 pints of it in the fridge that have been heat jarred. It took a litre of milk and a pint of defatted turkey broth to make it. And ya know that butter,flour,milk thing I do called a roux or bechamel. I use it for a lot of things.

So this is just scalloped potatoes without onions and with cream instead of white sauce
@TitlisBusyKitchen09 жыл бұрын
pinkprincess12 Comparing scalloped potatoes to gratin dauphnois is like comparing crème anglaise to vanilla pudding... ;-)
@hiimsarah73099 жыл бұрын
that is a very creative way to look at that...that sounded very sarcastic but its not meant to be
