Chef JP has a fun life. Owns several restaurants in Manila and Dubai, travels around the world to do pop up cooking, gets to learn about different chef, kitchen and restaurant techniques. Stay in nice boutique hotels and fly business class. One day in Paris, the next NYC, the next in Mexico City. Literally he has the dream life. I'm Filipino American from NYC and work in finance / private equity and I envy this guy's lifestyle.

I am happy to look at Mexico City through your "new" eyes. I lived in Mexico for 7 years, from 1994 to 2001...Mexico is a place for appreciation of arts- cuisine,architecture, paintings,music, dances,poetry... whoever your contact is, has brought you to more hip (and also safer) side of Mexico City. Enjoy their millenarian cuisine...no hidden ingredients... and really varied.... if you like the tortilla everything will follow... enjoy the sauces... Early mornings and nights are cooooooollll ...stay warm... Brush up on your history. Galleon trade brought lots of Mexican products to the Philippines: avocado, achuete,singkamas,peanuts,guyabano,etc.We brought coconuts,tuba,and palapa to Mexico. Enjoy

Chef JP. Just sharing. When the Spaniards colonized the Philippines, they just freshly conquered the Aztecs in Mexico so when the expansion happened, it was the Aztec warriors that they used. And with the Aztecs, the brought to the Philippines their foods like Achuete, Avocado, Cacao, Maize, Chayote… and some Aztec words filipinos use still today are Palengke and Tiangge which is why you see alot of familarity. Thank you for sharing your trip.

The very first vlog of Chef Jp that ive watched was when he was surfing in the Philippines n sharing his knowledge in d kitchen with d locals n also d food itself with kids within d community. He looks genuinely down to earth fellow with the surfer vibe. Till now there's this adventurous surfer dude trending the waves of the food culture from different parts of the world with his "jane". Stay grounded man, good luck n God bless.

Hi! Chef Jp, good to see this other kind of vlog on how to make a modern taco( they have mixers and conveyor) faster. The interpreter or your tour guide is knowledgeable about tacos or Mexican cuisine. However , better you can visit their very big market where you can see by hand the different kinds of masa(taco made flour or corn(different types)). Again your vlogs are amazing.. Halong!.

Thank You Chef for take the time to hire help with local guide, most tourists that came to Mexico city spend time eating cheap and not so good food with street vendors and never try or imagine what the mexican cuisine really is.

I totally get it with the tacos in Mexico. I live in San Diego, CA, which has the best Mexican food in Cali, however after trying Tacos in Mexico , it doesn’t even compare to the tacos in California. Tacos in Mexico are sooooo good! The tortillas are light, so it doesn’t seem so filling and the flavors of the meat (I had queso birria - beef with consome) I can’t explain! Let’s just say I don’t want to have a birria in California because I don’t want to be disappointed lol. Their salsas in Mexico are so fire! 🤤

Chef salamat gid for this vlog, sure brought back a lot memories of my teenage years , pre- internet and pre-cellphones where me, and some friends just immersed ourselves in the culture, food and lots of balod surfing our brains out . You're headed to Colima, south of there about 2 hrs there's a tiny enclave of La Ticla in Michoacan...awesome quaint surf spot kung maka time ka😊

Hi Chef JP. Thank you for sharing this video. Im from Iloilo but my dad is from Pampanga where they have Tamales that are wrapped in Banana Leaves as well. It would be interesting to know what the similarities and differences are of each of the tamales. I just know the one from Pampanga has coconut milk, chicken, and salted egg.

Mexican tamales kind of different they don’t have coconut milk and salted eggs plus Mexican tamales is heavily made of corn and spices they put into though the influence of Mexican tamales is very great to our own pinoy version of tamales cheers 🍻

My mom and old visayan folks in Bohol used to cook sweet tamales grounded corn wrapped in banana leaves. I have not seen such in this fastfood generation. It seems extinct.
