This is EJ! Recently I saw an old youtube video of a KZfaqr I like who went to England and had scone with clotted cream and strawberry jam!
I heard they sell it in Market Kurly and I wanted to try it, so I decided to make it myself first!
The first clotted cream recipe was a well-known one using the bain-marie method but I don’t know why I failed… my 3 days of hard work was useless…
The second method was easy and had a very similar texture to the ones sold!!!
It was mildly sweet like condensed milk and was just the right texture for scone! The combination of scone, strawberry jam, and clotted cream was great!

Ingredients
T = Tablespoon , t = teaspoon
400g Whipping cream
For 9 servings of scone
300g cake flour, 15g baking powder, 3g salt, 60g sugar, 150g butter, 40g milk, 80g whipping cream, egg wash to coat on top (not necessary)
