INGREDIENTS
15 Large Prawns Preferably Red Leg Prawns / 红脚虾 / Ang Kar Hay
1/2 tsp Sugar
1/2 tsp Salt
2 tbsp Chinese Rice Wine Shao Xing Jiu / Hua Tiao Chiew
2.5 tbsp Egg White
1 tbsp Sweet Potato Flour
4-5 tbsp Corn Flour
1 bowl Oil For deep-frying the prawn)
SAUCE
4 tbsp Wasabi Powder
3 tbsp Japanese Mayonnaise
3 1/2 tbsp Condensed Milk
3 1/2 tbsp Water
GARNISHING
Ebiko Prawn roe
Black sesame seed

I tried this recipe and it turned out soooo good. I just used wasabi paste instead of wasabi powder and added a little bit of honey. Just the right ratio of mayo-milk-wasabi sauce. Nothing was omitted. I just lack Ebiko but substituted with sliced apples. I plated the prawn on a bed of sliced apples. Everybody loved it. This recipe is already written in my recipe book.

I absolutely love the anecdotes and tips at the beginning of the video. It’s like watching my own aunty give me very detailed instructions on recipes that will last generations. It was so funny watching her say “kerk” about buying prawns during Chinese New Year. I know these videos take a lot of effort to coordinate, film and edit. Trust me when I say that effort is well appreciated. Thank you very much.
