萬用炒肉餡 (可做一盒餡約370克 適合用來做鹹水角/芋角/茶果)
材料:
免治豬肉380克
冬菇25克
(留起浸冬菇水備用)
蝦米25克
韮菜/蔥花適量
乾蔥頭1粒
蒜頭2粒
豬肉醃料:
鹽半茶匙
生粉2茶匙
油1茶匙
調味料:
生抽半茶匙
蠔油 1茶匙
糖 1茶匙
五香粉半茶匙
胡椒粉 適量
紹興酒1湯匙
芡汁:
冬菇水50毫升
粟粉兩茶匙
Fried Pork Filling (for deep-fried dumplings wit pork filling/deep-fried taro dumplings/glutinous rice cakes)
Ingredients:
Minced pork 380g
Dried mushroom25g
(reserve the soaking water)
Dried shrimp 25g
Some leek or scallion
Dried shallot 1pc
Garlic 2pc
Marination for pork:
Salt 0.5tsp
Potato starch 2tsp
Oil 1tsp
Seasoning:
Soy sauce 0.5tsp
Oyster sauce 1tsp
Sugar 1tsp
Five spices powder0.5tsp
Some white pepper
ShaoXing wine 1tbsp
Others:
Mushroom water 50ml
Corn starch 2tsp
