Taiwanese Deep Fried Rice Cake Recipe (Reduced Sugar)
Ingredients:
Glutinous rice flour 600g
Brown sugar 75g
Demerara sugar 410g
Water 560cc
Directions:
1. The brown sugar is sieved first to remove large particles.
2. The batter: Put all the ingredients into the pot and stir well. The longer the stirring, the more even the rice cake will taste. The steamed rice cake will taste elastic. Stir until all the powdery particles are gone.
3. Spread heat-resistant cellophane on the mold (stainless steel bowls) and pour the rice cake paste into the mold. Shake the bubbles out of the batter.
4. Steam in a pressure cooker for 1 hour, start with cold water and steam over a medium-to-small heat, and it's done.
PS: If you use the electric pot, make sure to steam for 2 hours with at least 2 cups of water in the outer pot. Be careful to make the temperature steady (not fluctuate with high and low heat), or you would probably fail making yummy rice cakes. After making rice cakes, put the uncut rice cake in the freezer (minus 19 degrees Celsius) right away, the rice cakes can be good for one year.
How to deep fry rice cake (Taiwanese style):
5. Cool the rice cake down to room temperature (or unfreeze) and slice the cake.
6. The batter: Stir an egg, add an appropriate amount of all-purpose flour and water to reach the consistency in the video.
7. Coat the rice cake with the batter.
8. Deep fry the rice cake slices in the wok until the surface color becomes golden brown on both sides, turn to high heat before finishing frying to prevent the surface from being grease.
