he has something better than a TV show, he has an internet show where he controls the content and receives more money than he would as a presenter/host of a cooking show by being a one man show, he does the script, records and edits the audio, writes the blog post, edits the video, films it, does his own social media, etc etc besides, the first person format "wouldn't be acceptable" on television

Made this for the wife on Valentine's Day. Came out amazing. I used Truffle cheese with the Cheddar and then instead of mixing butter with the Panko breadcrumbs, I used Truffle oil. Thank you my friend for the inspiration!!

Dear Chef John, I found your channel two weeks ago while suffering from a debilitating fever, it caused a lot of muscle ache and I refer to it as Dengue-lite. Well, as you may know, when faced with hallucinations and musculature pain, the proper thing to do is to watch cooking videos. Wow, I must say your channel is a burst of inspiration. When I recovered, I even found your recipes to be as superb as a feverish and hallucinatory mind would have surmised! Thank you so much for your work. I've been playing with your recipes ever since. No you wouldn't. That starchy water would make for a terrible base/stock. Had you cooked the shells on low heat in herb'd water, however, it could definitely make a great soup.

Actually there a lots of noodle soups where you cook the noodles right in the soup, just think of chicken noodle soup or alphabet soup. Maybe it's not super fancy but it's by no means a no go.

I saw a chef making this dish on youtube and he had a good tip. He toasted bread crumbs in butter but sprinkled them on the top after the dish had baked because he did not want them to suck up the sauce. Works like a charm.

Being from the North East, I love lobster. Being a human being, I love Mac & Cheese (good former poor folks, baked macaroni and cheese). I absolutely, however, detest lobster mac & cheese. I have never had a place, person, restaurant do justice to either of those dishes when they combine them. That being said... that was without a doubt the best looking batch of LM&C I have ever seen. I was pretty much drooling. I think this may be pushed to the head of the list of Chef John's foods I am making... ahead of, even the chocolate cake with raspberry from last week. This is the Chef John food we all know and love. Only thing I would change... using ginormous Maine lobster tails for more meat. That begs the question, Chef, will claw meat work in this recipe and how would we cook it first?

Made a large batch of Mac and cheese using the techniques in this recipe as a guideline. Instead of using Lobster, I used rotisserie chicken, and I also added sautéed onion, garlic, broccoli, and mushrooms. Oh and bacon. I started by cooking the bacon in a large skillet. Then removed the bacon when it was crispy, removed most of the grease, tossed in the broccoli, onion, seasoned it lightly with salt, and cooked it on medium heat until the broccoli was just approaching soft. At that point I added the garlic and cooked for a few more minutes. I removed the veg from the pan, turned up the heat, added some olive oil, and cooked mushrooms in the same pan on high heat until they started to brown. One brown I removed the mushrooms from the pan, took the pan off the heat, added butter, melted it, and then made the roux, and added some anchovy paste. At this point I followed the guidelines in the recipe and brought it to a simmer. When it reached a simmer I added the cheese as Chef John did and followed the rest of his instructions. When the pasta was done my cheese sauce was too thick so I did add some pasta water to the sauce until it was smooth and creamy but just a tad on the runny side. If there isn't enough moisture the cheese sauce will dry out when baked in the oven. I mixed the chicken, some of the bacon, and all of the veg with the noodles and the cheese sauce. From there it went into a buttered casserole dish, topped it with the buttered panko, and the remaining chopped bacon. Then baked it at 400 for about 18 minutes. This is my first time making a Mac and Cheese dish, I usually don't like Mac and Cheese, and boy this was good! Thanks Chef John for the technique instruction and the inspiration!
