This time, Chef Murata of Kikunoi in Kyoto showed us how to make winter melon with starchy shrimp sauce.
- Ingredients
4 blocks of winter melon (80 to 100g each)
8 shrimp
450cc dashi
30cc mirin
30cc light soy sauce
[For cooking shrimp with sake]
10cc sake
2 to 3cc light soy sauce
2 to 3cc mirin
2 tbsp potato starch dissolved in water
green yuzu, as needed
