Thanks so much for sharing your recipe, Jeni. I’ll give these a try, next time I see some nice Brussels sprouts on sale. Usually I pickle green beans when I snag some nice ones, because they’re so easy to jar up. But I love me some Brussels sprouts ❤

Ok... I'm a recent subscriber... I've got a question. I understand why i need to blanche things before freezing to preserve flavor, texture, prevent "funkiness"... But if I'm water bath canning, do i really need the added step of blanching? I've never tried pickled Brussels sprouts and i am considering giving it a try... Also, i know when i pickle certain things it's best to wait anywhere from a couple of weeks to a couple of months before i crack those jars open... Did you mention a "no touchy" period for these? Thanks, and good video. One more thing... I don't know if you use the same basic pickling liquid for your recipes, but I do (with minor flavor variations) and i make more than i need and pour the rest into a jar big enough to fit it and throw it in the pantry for next time... Always keep a single jar of whatever was left and that way you don't have to stop and make more, mid-process. Hope my tip was helpful. ❤️

Blanching them before canning is help keep the color a little brighter, you do t have to Blanche but they will turn swamp green. Yes, wait at least one week before opening them.
