I think one of the most appealing things about you and this lifestyle is how chill it is. It seems like health and fitness can get so crazy with people in neon colored spandex jumping around doing all this crazy HIIT in a very scary looking gym and then pounding down all these pre and post workout supplement stacks that I'm pretty sure would give me a heart attack. I love that you keep things simple and natural and non threatening! Thanks to your IG post yesterday I was inspired to get out with my family for a nice nature walk and I hit my 10,000 step goal for the first time in several days, not even because I was trying but because I was enjoying nature and my family. You really are an inspiration and a gem.

Your intro film is beautifully made, but I think it’s a tad long. I was wondering if some of it could be moved to the end of the episode. So I watched this all the way to the end (I usually bail on videos when I realize no more “info” is coming) and see that you have footage with an overlay, also nicely done. I still think you could move some footage to the end, then gradually “fade in” the green foreground. Just a suggestion from someone who is always eager to get right to the point. Love your recipes and “convenience” approach. Thanks for sharing them! 😊

Everything looks great... and simple. You are an inspiration to many. I am 60, and now I finally reached a weight that is just a few pounds away from getting me out of the overweight category. I haven't been this weight for many years so it's exciting. I am even motivated to continue with slow weight loss to get to an even healthier and more comfortable weight. I found out in May that I have Celiac Disease and I have struggled since, trying to balance losing weight, eliminating gluten, and doing starch solution, while making sure I'm getting enough nutrients in the food I'm eating because I can't eat a large volume of food. I crave comfort food, and these recipes are going to hit the spot! None of the medical professionals I see understand how to treat my CD, nor that I want to do Starch Solution, so I have felt very alone in this process. I appreciate you very much!

I share your videos all the time and am inspired because a.) it’s just so healthy. Everything from the food to the mindset of just being healthy and not focusing on hating your body. b.) the focus on EASE and simplicity is terrific for not only making this a lifestyle habit but also just leaving time for other fun things in life and c.) you are so relatable. I have a neurological condition that makes me near constantly sleepy and putting things on backwards or inside out or leaving the measuring cup in the oatmeal etc. is a real part of my life. 🤣 Thanks for not editing that out. I’ve made similar pancakes and I love the fall spin with the sweet potato or pumpkin. 🥞🍠 I could just live off of the lentil taco boats and I might even just buy pico de gallo to make it even easier (although, it’s RIDICULOUSLY easy already, my depression gets worse in the fall and winter so a shortcut like that can set me up for even more success). I’ve been really wanting a healthy casserole recipe and I’m so excited to try this. It looks so easy and tasty and I’m pretty sure we already have all the ingredients, including those breadcrumbs. I made a vegan Mac and cheese with cauliflower onions peppers zucchini and summer squash this morning. That you for reminding me about 50/50. I also decided to just eat 500 calories a day of starches and fats, the rest being fruits and veg. Hopefully this will kick me off my plateau!

It looks amazing!🌸 You eat such a variety of foods.🌼 What are your own thoughts on why you still had some nutrient deficiencies and started to lose hair? I recently started to shed hair after 10 months on a plantbased diet and that kind of scared me. I am also concerned for long term dental health. I mean, if one eats as varied as you and still get problems with some nutrients...? I'd love to hear your thoughts on why? Gut issues? Stress? Gluten? Soy? What caused those deficiencies? Too little calories during your weightloss, meaning less nutrients? Are you keeping an eye on your children's teeth? Any issues? Sorry to ask these questions, I hope you take it as it's meant.... From a loving and caring place.💕 I think that it's important to be able to discuss these things. I love that you were honest about your issues and how you dealt with it!🌺 Some people just seem to hide their issues and then just suddenly stop being plantbased and afterwards telling everyone about all these issues they had. It's better to discuss it openly and try to fix it. I was vegan when I was younger. It didn't go well. So ofc I ran back to an omnivorous diet. And at first it felt better bcs I had such severe gut issues. But after 13 years on a "healthy" omnivorous diet, I still got sicker and sicker by the years. So apparently it wasn't something "magical" in animal foods. But it seems like some people have more issues than others on a plantbased diet though. It would be interesting if you discussed these things in a video, also addressing gut issues, like extreme bloating. I have dealt with that again and I did a gut microbiome test. Turns out that I'm missing a key microbe (akkermansia) that is super important when it comes to gut lining health and how the gut deals with carbs. No wonder I'm bloating. And that's probably why I have had this issue with shedding hair. I have probably been missing this microbe from way before bcs of penicillin and pathogens, like EBV and streptococcus. Anyways, it would be interesting if you did a video on this topic. I mean, what issues can arise, why and what to do about it. Maybe do a podcast with someone that specializes in the subject. so I wish I knew the answer to that, I did see a correlation to my numbers going down when I started eating a lot of gluten again so maybe gluten causes gut and absorption issues...We have had no trouble with our teeth and if anything that area has definitely gotten better:) we are gluten free these days, is till create gluten containing recipes for those that are not gluten free but we have gone back to gluten free :)

I'm gluten and soy free and going to continue to work on my gut microbiome!😊 I feel better in SO many ways on plantbased, I just have to fix my gut issues. I heard Dr. Barnard say that hair loss and thinning happens with weight loss. So it isn’t necessarily a nutrient deficiency. Also the teeth for us are much better too. My dental hygienist always says I have the teeth of a child with so little plaque.

@@GTMustang24 That's interesting! I have never ever had this much plaque in my life. It's bcs of all the starches, it's like glue on my teeth. I'm extremly diligent with my teeth cleaning though so hopefully I don't get cavities from them. I'm going to the dentist tomorrow for a check up.😊

Everything looks amazing. I’ve followed you and your friend Hannah for a while now, and I think what’s been holding me back from starting a vegan lifestyle is two fold: the lack of energy I have to meal prep bc I’m overweight and sick, and the gas I get when I do have a day or two of eating high fiber vegan. Do you have videos on how to work through both those issues? So difficult for me to go to work w terrible gas pains. Sorry for the TMI. Just hoping you have tips! Saving this vid for the day I get motivated to jump into vegan!! Thx for all you do to provide these wonderful recipes to us!! You’re an inspiration to me.

Hi Laura! You might want to start with potatoes and ease into the beans, increase a little bit on the beans every time. Make sure to take a good probiotic every day. Also, when I was first starting I used Gasx when I had any gas or bloating. Mine stopped after a week. I’m sure others can give you great tips as well.
