👉 INGREDIENTS:

(For a 20 x 10 cm baking tin):
60 g buckwheat flour
210 g corn starch
30 g tapioca starch
20 g sugar
6 g salt
6 g psyllium husk
3 g dry yeast
100 g egg
190 g milk or vegetable drink
75 g butter or margarine
9 g xanthan gum
Egg for brushing
A knob of butter to add shine
POSSIBLE SUBSTITUTIONS:
✔️ Buckwheat flour, for any cereal flour or gluten-free pseudocereal: rice, teff, sorghum, gluten-free oats.... In this case, add an extra 20 grams of milk or vegetable drink.
✔️ Corn starch, for certified gluten-free wheat starch, rice starch (how to prepare it: • CÓMO HACER HARINA DE A... .
✔️ Tapioca starch for potato starch.
✔️ Egg for the same amount of aquafaba.
✔️ Sugar: if you cannot consume sugar, simply eliminate it. Sugar adds colour to the crust and fluffiness to the dough, but it is not absolutely essential.
