The Goan Prawns Curry (Goenchi Sungta Kodi in Konkani) is one of the best coconut-based curries one could ever try!
Pairing the unmistakable, lovely flavour of prawns (or shrimps) with the commonly used spices, tangy tamarind and sour Aambya Sol, has brought into existence a curry so aromatic and exploding with flavour, yet so appropriately balanced, it is indeed a culinary genius. Goan recipes are distinguished by their bright, show-stopping hues, which in turn bring satisfaction not only to one's belly but also to the eyes :) Honestly, it's rare to not spot vibrancy in our dishes- it's no wonder that Goans also have bright, cheerful behaviours!

1 US Cup = 240 ml
Ingredients:
20-30 Prawns, washed and deveined (I got them in mixed sizes)
1/2 teaspoon Salt
For the Curry Paste:
1 Cup or 90 grams Fresh, Grated Coconut
1 Tablespoon Coriander Seeds
1/2 teaspoon Turmeric powder
1 teaspoon (levelled) Cumin Seeds
5 Black Peppercorns
5-6 Garlic cloves
1" piece of Ginger
2 dry, red Bedgi Chillies
3 dry, red Kashmiri Chillies
A small lemon-sized ball of Tamarind soaked in warm water
Water as needed for grinding to a paste
For the Curry:
3 Tablespoons Oil
2 medium-sized Onions, sliced finely
2 Green chillies, slit
1 medium-sized Tomato, chopped
The prepared Prawns
The prepared Curry Paste
Water to adjust consistency
4-5 Aambya Sol (Dried, raw mango; can be substituted with equal numbers of Kokum rind or some Tamarind juice)
Salt to taste
1/4 teaspoon Sugar
A slit chilli, optional
Fresh, finely chopped Coriander for garnish
