Hakka Yam Abacus Seeds 客家算盘子 | Chinese New Year Dishes 新年菜肴 | CNY Recipes 新年必备年菜
Hey everyone, we are back with another episode of g8stromania. Today, we are going to be introducing a CNY dish from the Hakka dialect group known as Abacus seeds. This dish is a favourite during Chinese New Year because it symbolises having alot of money to count using the Abacus! The yam balls are chewy, with a umami and flavourful sauce.
For this recipe, you will need the following ingredients:
420g Yam
15g dried shredded squid
100g pork
10g black fungus
30g dried mushrooms
4 cloves of garlic
7-8 shallots
100g tapioca flour
5g wheat flour
0.5 tsp salt for dough
Some spring onions for garnishing.
1 tbsp oyster sauce
1 tsp white pepper powder
1 tsp sugar
0.5 tbsp soy sauce
0.5 sesame oil
Steps:
1. Steam yam for 20 mins after cutting
2. Prepare shallot oil.
3. Cut black fungus and dried mushrooms into strips
4. After steaming yam, mash it up, then add tapioca flour, wheat flour and some warm water (about 2 tbsp) and 1 tbsp shallot oil. Knead until a dough is formed.
5. Divide dough into small balls.
6. Boil the yam balls until they float.
7. Stir fry the garlic, dried mushrooms, black fungus.
8. Add in the pork, then once it breaks apart, add in some water and the dried squid.
9. Season the sauce.
10. Add in the yam balls.
11. Taste the dish, adjust, then add the spring onions and ready to serve.

I made this yesterday and it’s a great recipe! I didn’t add wheat flour and it still turned out great. Thanks for creating this video and sharing your recipe, I’ll definitely make this again :)
