Handkäse mit musik (“handcheese with music”) is a Hessian specialty. A topping of raw, white onion vinaigrette exacerbates the cheese's already pungent odour. How does an “onion marinade” equate to “musik”? The running gag is the music comes later-a reference to the flatulence supposedly caused by eating raw onions. This dish makes this Großvater very happy.

dito - and i just thought "wait why was he speaking german?" and then i read the title hahaha - handkäs especially mit musik is mostly eaten in hessen/hessia in germany (like a us state or japanesen preficutre its a bundesland) and guess from where I am xD - exactly the midle of hessen near gießen which many people known cause the us military had their a big casern - and handkäse mit musik is available here in mostly every normal/traditional restaurant :DD

Glad the Handkäs mit Musik turned out so well. I also often make a different dish with Handkäs where you chop it into small pieces, add chopped onions, some oil and vinegar, a table spoon of mustard, caraway seeds, paprika powder and some parsley and let it marinate over night. Also goes very well with a nice bread. In Hessen they drink Ebbelwoi/Apfelwein/cider with it but here in Rheinland-Pfalz, the state just next to Hessen, we're having some dry white wine with our Handkäs, as we're very much wine country around here. Again, it was very cool to see someone from across the globe make something so regional. And I'm sure your grandchildren will call you gross farter from now on. :D

I was born in Frankfurt, and indeed Handkäs mit Musik is one of my favourite dishes ever, period. Nothing beats it as a light, healthy and extremely tasty lunch :) These two videos of yours reaaally made me happy, and though your Handkäs came out looking a bit different than what I'm familiar with, it's a small miracle to see this dish prepared and enjoyed on the other side of the globe. I think you did this justice

I used to love eating this in small inns after a hike in the mountains or at a beer or wine festival. Wonderfully refreshing and a nice pick me up.

my grandmas and my favorite way to eat this cheese is on bread with a thick layer of butter and then drizzled with sugar beet syrup "Goldsaft", which is basically molasses made out of sugar beet juice and its less bitter and more fruity tasting than molasses.the germans will know what im talking about. its really tasty that way

When I was in college, I was boarding out at this lady's place. She was from Germany and she would make this every Sunday morning after church. She used onion, saurkraut, and distilled vinegar in hers... Talk about the granny walkin' farts!🤣🤢

I'm from the Frankfurt area where this is one of the most known and traditional dishes but I can honestly say that barely anyone likes this stuff 🤣 In my life I have encountered only one person that genuinely enjoys "Handkäs mit Musik". Everyone else that eats it eats it because they feel like eating it like maybe once a year and then then usually go "well yeah it's as bad as I remember".

As a Frankurter Bub I have to really applaud you! If you like to avoid a massacre on your plate the next time, you may try the way we do it: -cut the Handkäs up into pieces on your plate and then move the Handkäs with the Musik onto the (buttered) bread and bite it off. In Frankfurt this dish is served only with a knife for cutlery, in case you get there sometimes. For the recipe of the Musik: you are totally right to add a little salt and pepper. I (and many others) also add (very) little paprika powder as well. If anyone tells you "You're not authentic!" tell them to kindly fluff off, as there is no single original recipe and we do it just as we like it best. Personally I like to use a ratio of 40% Apfelwein (make it yourself, it's great fun!), 10% vinegar (whichever) and 50% cold pressed rapeseed or sunflower oil (again, whichever). Last hint: There are Handkäs variations as well. You get them with and without caraway seed already in the cheese, different sizes and also with an edible mould. Subscribed to you for ages now, after your Handkäs videos I now can die in peace :D

Mr. Webber, I came upon your channel accidentally one night at work about 2 months ago and watched several videos (nothing going on at work) and immediately got excited to make cheese! It was never something I planned on, but it is now! I've slowly been acquiring necessary utensils, cultures and accoutrements via the internet and have still yet to make my first attempt. I've joined a facebook cheese group & watched MANY more videos since! I'm a bit nervous & scared, but also excited! My Mexican wife really wants me to do your Queso Oaxaca first! Wish me luck! Next week, I'll have time off work to give it a whirl.

As a German/Swabian, I know the recipe with Rohmadur or Limburger cheese. Definitely very tasty, even if not everyone likes it, maybe because of the music?😂

good for a first Time,but a Handkäse is glassy looking inside not spotty like yours and it is soft,you can cut it with a Spoon and it is flexible(rubbery?) not like a Hockey pug. A Handkäse with Caraway Seed already in it is called Vaters Sorte or Fathers Choice.Just wanted to let you know.Thanks for your Channel.Good Day Mate

I think it's a question of ageing it for a bit more. I remember buying very fresh Handkaese and it looked a lot like this one. The caraway is supposed to help not having to pass as much gas. Not sure, though, whether that's just a myth? As for how to serve: you definitely want to slice up the Handkaese just like you'd do with any other cheese. I love onions, so I used to slice the Handkaese thin enough it was nearly transparent. You'll find it much more easy to eat that way, too.

Hey Gavin! glad to come back and see you're still in the cheese game. A local place near my town makes what they call "Beer Cheese" its like Mozzarella sticks but its very firm and salty. It pulls apart like string cheese; and i was going to do a Whole Milk and Vinegar (easy Mozzarella) atempt but i dont know how to mimic its texture. Was wondering if you could point me in the right way, any time i google it just takes me to deep fried mozzerella sticks lol. Also i keep seeing a back and fourth with the 2 ingredient method people say Homogenized (3.25%) where i am works and some say it doesnt.

I'd love to see some more unnusual recipes like this that would have come about from a specific interest in cheese. You understand your cheese well, surely you've got some interesting recipes (or personal tastes anyway 😅)

Cheese generally can be complimentary to other foods or work well with condiments but ultimately it should be able to stand on its own in terms of flavour, aroma and texture. Otherwise it’s just cardboard
