I love salsa! I mean LOVE! And my homemade salsa is my favorite. Made with my homegrown tomatoes. You only need a few ingredients and it comes together easily.
Where this is a canning recipe, you don't have to can it. But if you do, you need to know you can add different seasonings and various peppers and even change the number of peppers and onions. But for every 5 pounds of tomatoes, you'll need to add 3/4 cups of an acid (apple cider vinegar, lemon juice or lime juice).

I loved watching you make this beautiful salsa. So many others I have watched leave out so many good ingredients that their salsa looks boring and I love a full body type taste. I do add some seasonings to my own salsa like a little bit of cayenne and some cumin and I tend to go a little heavy on garlic cloves. Your salsa looks so delicious and chunky, I am going to write it down in my canning cookbook for later use. Thanks for sharing your process. Dehydrating the tomato skins into a powder. I'll never throw them away again. The Knorr tomato/chicken bullion is a must for my green chili, but living in the boondocks, I have to order it online. I'll try and make my own.. What a great idea! Thank you.

Aww thank you!!! So glad I could help in some way. I also just did a video on how salsa making just got easier. Same recipe, but instead of baking the tomatoes to get the skins off, I bought a food mill. The food mill will remove the core and skins and depending which screen you use, it can even remove seeds;) Happy canning🙌🏻🙌🏻🙌🏻 and thank you for your kind words;)

Love your video!!! Just wanted to share i see how you used the lid magnet thing to measure, just a trick i learned that the ridges on the jars are marked for headspace, the middle one is 1/2 inch!!! And I like to throw a penny in the bottom of my canner so I know when its boiling, then I dont have to lift the lid to knkw when it's boiling!!! Thanks to all the hours of KZfaq I picked up the tips!!

Yes. I used mostly Roma’s but a few Cherokee purple. I have also used sans marzano. Roma’s will work excellent;) Have a wonderful weekend🙌🏻

Looks delicious! Will have to go get the ingredients soon! We have jalapeños in our garden, but the tomato production is waning. I have tomatoes in the freezer. Makes delicious pasta sauce.

As long as the jars are sealed, it should be good for years. But you’re right, they won’t last that long. Lol

does it matter when you add the apple cider vinegar? do you cook it on the stove with all the other ingreds or just add it right before jarring it up? thanks

It shouldn’t matter. The tomatoes, unless you use low acid varieties, are acidic on their own. Happy canning🙌🏻

Absolutely! I just wouldn’t store in direct sunlight. They can handle some mild temp fluctuations just would trust storing in a hot garage that freezes in winter;) Should be good for years! 🙌🏻 But honestly, I never have any last that long;)

If I did the process the right way ones they come out and let them cool off if I hear the popping sound that okay right but after 24hr I checked the seals to make sure it don't open right way if it's tight and seal that mean the I did the process right.

Robert Hurtado yes sir! Sometimes you can have one not seal. It doesn’t mean you did anything wrong. Just for some reason one might not deal. I have well water and would have one not seal on occasion. If one doesn’t seal, just refrigerate and eat it first;) Enjoy your salsa!

Aww thank you! And congratulations!!! You’ll love canning! It’s quite addictive;) I can everything on my glass top 🫢🤪 Never had an issue. I’m just careful setting it down when it’s heavy. That is the cheapest Walmart model canner they make I think. Still works so I keep on using it;) happy canning!

Only fresh garlic, fresh cilantro and fresh jalapeños and fresh onion. You can certainly add spices if you like. 😘

For some. It’s all up to you what seasoning and spices you prefer. You most certainly can add it;)

I'm new to this , but what I would like to know is how do you measure your 5 lbs of tomatoes or weigh them??

I weigh them on a kitchen digital scale. I put a Bork on the scale. Zero it out. Then add tomatoes as I process them. I weigh behind processing to a little over 5 pounds. Because after you remove skin and core they will weigh a little less. But honestly, the recipe isn’t too persnickety. It’s very forgiving. You can certainly estimate;)

Not at all. The tomatoes are acidic and I use apple cider vinegar in the recipe. As long as they seal, you are good;)

How do you keep the jars from having so much liquid?

Lynn Scott great question. It helps to use paste type tomatoes as they will have less liquid. But you can use any tomatoes. When you are heating it before putting in jars, you’ll want to cook until the liquid is gone or to your desired consistency. The more liquid, the longer it’ll need to cook. You could possibly pour off some of the “water” before hand. I used mostly Roma’s but a couple Cherokee purple. I didn’t have too much liquid. I had a nice moderately thick salsa. Hi Shannon. I just found your channel and enjoyed it. I dont like vinegar or lemon juice in my salsa so I just put a 1/4 tsp of citric acid to my pint jar. Do you think thats ok?

Here’s my recipe: Per 5pounds of tomatoes (after removal of skins and core) 5pounds paste type tomatoes preferred 4large onion 1-2 large bunch fresh cilantro 8 large jalapeño seeded (for milder, or leave seeds for hitter)or more to taste 2-3tbsp salt 15 cloves garlic or to taste 3/4 cups apple cider vinegar or lemon or lime or red wine vinegar Boil/simmer approx 30min or until hot and desired consistency Fill hot canning jars (approx 7pints) 1/2in headspace Water bath 20min

@@valjalava1951 “Hot” is different for everyone. Lol I’m sorry. My father can’t eat poblano peppers. So I understand. I think we just eat them more often. I love jalapeños! So make a note of how many to use next time;) You can also get “fool you not” jalapeños. They have hardly any heat at all;)

Can I just steam the jars instead of submerging them over the lid? Have you ever gotten water in the salsa doing it like that? I would have water to 2 inches below lids, is that ok?

I’ve heard of different ones trying different things. But I can’t speak for steaming. I’ve never done that. I’ve never had water get in my salsa;) Changing the headspace can cause jars not to seal. I’d be afraid to try it. That would be a lot of sir to remove. Wish I could help you more. My best to you.

Yes. And to me, canning salt is a bit saltier so be careful if sensitive to salt. I don’t add any sugar;)

What advice do you have for using tomatoes such as jet star slicing tomatoes and cherry tomatoes? Also, approx how many tomatoes are you using for a batch? Are you measuring for 5 lbs before removing the peel and core or after removing from food processor? I am looking forward to making your recipe!! Heard it was awesome :)

You can use any tomato. The slicing and cherry will be juicier and may take longer to cook the water out. That’s all. You should be just fine;) Thank you for watching and happy canning;)

I use 8 jalapeños. But I often remove seeds for some for those who like it milder. I prefer to leave seeds cause I like it spicy;)

My water bath canner says don't use on glass stove. But i see you have the same canner as me and a glass stove.

This isn't really salsa for us, i think we make it all raw and hand chopped! I'm doing lacto-fermentation or as close as possible! We call cilantro Coriander i think; thank you :) I'm going to follow the Italian recipe. (UK)

You only need to choose one. ACV, lemon or lime. I always use avc;)

If you use paste type tomatoes there are much less seeds. I have since purchased a food mill. It helps tremendously with the skins and cure without putting them in the oven. It’ll help with seeds (more depending which screen you use). But I don’t mind the few seeds I get.

Lol but I use the skins to dehydrate into powder to use in other things;) I just don’t like the skins in my salsa. But I love them in other things… pulverized into powder;) for soups, stews, casseroles, omelettes, hummus, sandwiches etc. LOVE them;) Thanks for watching!
