I live alone and when I cook... I cook in large batches and freeze individual meals for myself. It's great to have a huge variety of home cooked meals to choose from. My deep freezer is always full of wonderful things! My 13 year old grandson loves to see what I have on hand when he's here... He says it's like going to a restaurant for lunch! I had a shoulder replaced last August. I had about 100 meals in my freezer when I had it done! I think there was about 20 different items to choose from. Made my life easy...

I just broke my foot last weekend and had 50+ meals prepped in the freezer. It has been a huge blessing to not have to cook right now.

Ugh I'm recovering from a broken leg and wish I had a stock in the freezer! There's no real way I can cook right now and I'm usually the cook of the house 😭

One thing I appreciate about this channel is the motivation Becky brings! I work full time outside of the house, and sometimes my homestead suffers because of it. Acre homestead is what I aspire to. 😍

A homesteading woman with a day job - finally! I love watching and learning about other’s homesteads, it’s my husband and I’s dream. But often homesteaders work from home or are stay-at-home parents and that’s just not feasible for our family. We both work jobs we love, but want to pursue homesteading. Thank you for sharing!! My husband and i started the homesteading life over 20 years ago when we got married. I was in pharmaceutical school, pregnant, and become very aware of what different chemicals did to our bodies. I was paranoid for my children to eat it. So we grew and raised our food. I am glad people are starting to do this.

Eggs will last longer if you don't wash them. I keep them on the counter in a 3 shelf unit all year long. I don't wash them until we use them.

I totally agree that a Homesteader with a day job is what I need to see. I don't plan to give up my day job but want to incorporate some old ways i was raised with. Thank you for showing this side of homesteading.

Those wavy bits of homemade pasta would go great in a lasagna soup. Yum! I'm really intrigued by this homesteading lifestyle. I currently live in an apartment, and started a small garden on my patio, but one day hope to have a home of my own to do a real, legit garden.

With your tomatoes this year you could make and freeze yard sauce. A bunch of tomatoes chopped in half, a zucchini cut into large pieces, olive oil and basil leaves. Roast for about 45 minutes. Throw in the blender. I freeze mine in gallon bags and then throw it in the crock pot with chicken to put over pasta. My kids don't even know zucchini is in it.

I love that you don’t make up yourself for the camera. I love Costco as well! This week I will make homemade pasta with my daughter for the first time! I am too scared to do pressure canning!

You need a victorio strainer for your tomatoes and grapes. Easy quick work of skins and seeds and not a terribly expensive tool.

To grow big onions, start the fall before (so for the 2022 season, start your garden prep in fall 2021). I dig a great deal of compost into my onion patch in the fall before the ground freezes, working it well in. You can also use fertilizer if you prefer. Make sure the area drains well; I don't think there's any such thing as too much compost, which helps with drainage! I've always had good luck with starting from onion seeds, like white Spanish, yellow Spanish and red globe for my area. We grow long-day onions. Plant your onion seeds indoors under grow lights in late winter...late January or so for us. They should come up in a week to 10 days, sometimes even 2 weeks. A fan blowing on low for several hours a day is helpful, but make sure the seedlings don't dry out. If the seedling onions start to look leggy, I trim off about the top 1/4 of the leaves (use them in your cooking). In March, I set the little transplants out in their patch or row about 2-4" apart (so they can spread out) and mulch lightly. They like lots of sunshine and good drainage. They HAVE to be well-weeded, and watered regularly, since they have small root systems. Raised beds also work well. We can harvest medium to large onions in 90-110 days, depending on variety.

If you Keep the bloom on the eggs- no need to store in fridge. It’s like a little protective seal so you can keep on the counter I love watching your channel.

I was going to say this if you don't rinse them off they can store on the counter for a long time without having to put them in the fridge me and my bestfriend that had chickens she gives me eggs all the time keeps me up on them lol and she has tons cause she has so many chickens and she adores them so much but she told me then my husband's grandmother and my mawmaw all told me not to clean them off unless I want to put them in the fridge for a while but if I don't clean them I can keep them out and they will last longer then they do if u clean them and put them in the fridge ...so glad to see someone else said it as well

I like to see how people store things and what - my own form of National Inquirer magazine which I would NEVER look at. LOL Have you tried savory oats? You saute the whole rolled oats in butter then add water like cooking rice. It is so good and Quaker put out this version in their ads 50 years ago called Golden Oats. I just remembered and need to try it again since I'm buying organic rolled oats now from Azure also. I have a bottle of green powder as you do, left over dehydrated greens that I add to sauces, etc. just for nutrition. What I liked best about this video is you explaining why you have certain things and how you used it. So informative!

This has been so fun to go back to the beginning of your channel. It’s good to see the process of canning, see how your gardens have evolved and you have improved your techniques and flavor profiles. I wish I would have tried my hand at gardening much sooner. Not only would I have been able to see how much fun and rewarding it is, but also how I have control of the ingredients in my end products. Why not still use it for lasagna? Might actually make it easier to cut & serve.. or some other ideas.. cut up & cook onions & cabbage.. and add in the cooked broken noodles & lots of butter .. meat optional . My friend makes with egg noodles but I think any kind of noodles would work fine. She says its a Russian dish that is usually made with kiabasa? Or just add oil or butter & herbs ..@Acre Homestead

You can get a food mill attachment for your KitchenAid mixer for getting the seeds & skins out of the tomatoes. Chocolate syrup is just sugar, water & cocoa powder. It can be made in a batch & stored on the shelf. I would love to have those pull out shelves. They're on my someday list. Shelf pull out tracks are rated for the amount of weight they support. You should upgrade all your shelf tracks since you store canned food on them. (A half gallon empty canning jar- I use them for storing my dry foods so I know the weight- is 2 pounds by itself. The weight adds up quickly) Dry spaghetti packs can be laid down & stacked in a magazine holder laid on it's back. Keeps them stacked up to save space. At least in Colorado where I am, used canning jars are often priced higher per jar than new jars. Especially when they don't have lids or the lids are used- be sure to figure out the final price after you add lids.

Broken flats make great “ deconstructed lasagna”. It’s great for company. A big platter with loosely layered lasagna ingredients.

You can also water glass eggs … hydrated lime and water with the buckets that have the screw on tops or even gallon jars (I prefer the buckets) i water glasses about 20 dozen last summer … good thing because a fox got about half my flock in one day while I was at work. We are currently hatching more

Maybe consider getting a manual food mill to help in canning. You cook your tomatoes or fruit first, then through the food mill and it separates the juice and pulp, from the skin and seeds. Makes the process of peeling bushels of produce fast and easy.

You can dehydrate tomatoes and put them through a good blender to powder them !! They store so well like that!! Use a jar attachment to remove the air toss in a descent pack and you can make sauce, paste ketchup all that from powder !! Sorry I’m commenting so much just found your channel!!

I just watched this video with my husband and I'm so happy for you I was nearly in tears! You are living the dream! That is so awesome to hear this is only your first year gardening and yet, look at that you have done! Not only with having a wonderful crop, but you are already a preserving machine! I so, so enjoyed you walking us through everything and I love the ideas you shared. I'm taking notes! I also thought it was so different how you said for people to thumbs down if they didn't like the video. That was incredibly humble and bold. It's obvious everyone who has seen this video, including me, loves it. Needless to say, I've subscribed and can't wait to go through the rest of your channel. We currently live in an apartment, and there are enough stray cats around that make me uneasy about starting anything in our patio. For now, we are on year 2 or 3 of a CSA. That was encouraging for me to hear you started out on a CSA, practiced preserving, and graduated to gardening. We live in an area in South Texas called the Rio Grande Valley. If you have ever heard of South Padre Island, that is part of "the Valley" as we call it.

@@monicag.1527 Yeah I did CSA for 4 years and went to the farmers market and bough bulk produce from farmers. Last year was my first year gardening and I'm loving it

@@monicag.1527 I was part of a CSA for 4 years and bought a lot of bulk produce from them. I still do actually. They have been a great resource for me. I love getting to know our local farmers. You can grow almost year round in TX

Why would anyone give a thumbs down on this video? I just found this in my recommendation for the first time and decided to watch. It's a good inspiring video that helps give people ideas they didn't think of before especially how you organize a pantry is very helpful. Some people are just trolls.. I just subscribed. I'm 52 my name is Karen nice to meet you from southern New Jersey. I never thought about keeping non dairy milk like almond or coconut milk in my pantry. It was a good idea.

My Grandpa was from Switzerland and was a very accomplished chef. I have several if his cookbooks that are written in French. Some have been translated. All are amazing!

What a beautiful canning pantry! I wanted to suggest reusable canning lids to you. I tried them last year for the first time and had great success. As a lifelong canner, I wanted to make sure I never was out of lids. It's a small learning curve, but I had very little failure ( I think 2-3 lids). Worth the investment.

Onions- I switched to onion plants instead of sets. World of difference. Candy onions, large and taste awesome. Never going back to sets again.

This was extremely helpful for me to visualize the amount of space needed. Your whole channel is such an amazing view into the life I aspire to have. We have a large family but are very much “city folk” lol. I’ve toe dipped into organic gardening, canning, and dehydrating for over 10 years, but never on the scale that you do, but I’m ready to level up. Thank you for all the time and effort you put into not only the homesteading aspect but the filming and editing!!! Huge props to you!!!

I love seeing a well stocked pantry. A tip for storing jars, turn them upside down to keep them free of dust and such. I love home canned beans and peas of all varieties. I usually can those in the winter when I have more time and the extra heat can help warm the house. Here's to a great gardening season!

Turning Ball jars and the like upside down can cause corrosion on the lids and rings, thus breaking the seal, and is not recommended. Commercial jars would be different, of course.

I am not sure how you came about on our tv; BUT i am very happy you did! I live in Eastern Oregon and we bought our home last October. This was our first year having a garden and now chickens. I love seeing your massive garden, chickens, and o my the canning. Today is now my 4th day watching your videos. It made my heart very happy to see your pantry full of your hard labor. My mom made everything from scratch and canned as well. I followed her footsteps. Our garden has been blooming very well and im excited to can our items. I look forward to watching more of your videos and getting more inspiration to continue my passion. Keep up the amazing job!

Dehydrated cherry and pear tomatoes are so good! I was able to preserve 4 quarts of them last year and they were gone by January... we used them in soups, pastas, and pizzas:)

Couple things...Wow!! I always thought I worked hard when my kids were growing up...ahh nope! Girl you are amazing!! Those tomatoe skins, The Kneady Homestead dehydrates them all and then puts them in the blender and has tomatoe powder to add to soups, stews, etc...she is another one that just does it all!! The way she does her tomatoes, the skin literally slides off whole. Check her out sometime. ( Love her!) #2 Did you know that your local walmart bakery will give you their empty 5 gal FG bucket and lid (contained icing) for $1.00, if you ask them. If you want unopened lids, my Lowes carries them for 1.98 to fit the 5 gal buckets. Also, check out Tractor Supply for wide mouth lids if you have one near you. Ok. I am done. Fyi. Please be aware of a death in the family of Kneady Homestead? They recently had a really bad auto accident and they are running old copies of video with her husband in them because he passed away in the accident. She's been in the hospital in physical rehab and even both of their kids were injured as well... to a lesser extent than she was, but they as a family do need ad revenue from the yt videos if you want to run it all night as you sleep? That's what I do to help their family. One of her older kids is trying to get the bills paid.

I was about to say the same. I don't can but one year I had around 10-12 large tomato bushes full of tomatoes half ripe and they got wiped out in a day from a heavy hail storm.

I LOVE AZURE!! I am a drop coordinator for them in PA. :) You can also pressure can beans for later use. . I started making my own refried beans, and also pork and beans this year. I LOVE how they turned out! You now have me wanting to make my own ketchup! lol . . I already do make my own pizza sauce and you're right! It tastes so much better when you make it yourself! :) Keep doing what you're doing! Eating healthy and clean seem to be my goal these days, now that i've gotten older! lol (63) Good for you!
