How I make Jamaican TOTO or Jamaican Coconut Cake

I can remember my grandmother making Toto in the late 1940s at her “take out food” shop.
Also, at my High School in Kingston, toto was the most popular treat at our morning breaks. All
the important ingredients were easily available in Jamaica (except for imported flour). Toto
goes great with a glass of milk , with a cup of tea / coffee, as desert or a snack. If you like
coconut, you’ll love Jamaican Toto.
INGREDIENTS
DRY Ingredients
3 Cups Flour; 1 Tbsp Baking Powder ; 1 Tsp Baking Soda ; 1/2 Tsp Ground Ginger ; 1/2 Tsp Salt ;
1/2 Tsp Allspice or Mixed Spice ; 1/2 Tsp Nutmeg ; 1 1/2 Cups Brown Sugar ; 1 1/2 Cups Freshly
Grated Coconut OR Buy Desiccated Coconut.
Wet Ingredients
2 Cups Fresh Coconut Milk or Buy in Supermarket ; 2 Eggs OR Flax Egg is Vegan ; 1/2 Cup Melted
Coconut Oil OR Butter ; 1 Tsp Vanilla ; 1 Tbsp Jamaican White Rum
Preheat oven to 350F and cook for 1 Hour
Makes one 12”X 8” Pan TOTO

I made this last night was quite good according to my husband. Looked this morning, and half the pan is left. Suddenly my hubby has no friends... Thanks for the video.

It’s now 6:55 pm in Florida Monday December 7... I did try this recipe ... people people please go and try it .... it’s amazing how it came out , my family are so in love with this wonderful Toto cake lol.. I will definitely bake this for Christmas in three weeks😀 I wish I can post a picture so that you guys can see it . I’m so grateful for this recipe. thank you!!!

I lived in England until I was 15. My mother is from Clarendon Jamaica. So she would make Toto, cornmeal pudding, and sweet potato pudding! I am so familiar with Jamaican food! It’s all I know. Love your recipe.

One of my favorite cake. This brought back my childhood memory of my neighbor baking toto cake. Thks for a reminded me of my beautiful culture. The recipe was very detail. 🇯🇲🇯🇲

Thank you for giving us this recipe. It is very detailed and that helps a lot. Secondly, this is delicious! It is not overly sweet and the spices in there really bring a rich aroma and taste. When you eat it, the notes of the nutmeg, ginger, and coconut harmonize perfectly on the palate. It is light but moist. My husband added a cream cheese icing infused with the grated coconut. I used it as a dip for my toto bread, with a glass of milk, and omg! Again, thank you for this tasty recipe sir.

You can also sliver the coconut and grate in the blender, much easier.

In my 60 years of life Never had heard nor seen a Toto cake b4 and my second time baking something. Tried out the recipe yesterday and the result turned out great.

Really great demonstration, however in keeping with making the process safe, I'd advise to lay coconut on a flat surface when shelling.

Everytime I use baking soda in any of my cake recipes, they are ruined; all we taste is baking soda. Does anyone else find this to be the case?
