This is not your ordinary canned good! Not a very well-known recipe, pickled asparagus is a delicious springtime staple that has just a bit of spice. The spears of asparagus are packed into jars with a vinegar and spice sauce and canned for later consumption. Super delicious!

INGREDIENTS
- 2-3 pounds washed asparagus
- 3 cups vinegar
- 1 cup water
- 1 tablespoon canning salt
- 1 teaspoon sugar
- 2 tablespoons peppercorns
- 2 tablespoons mustard seeds
- 4 bay leaves
- 1 teaspoon dill seeds
- 1/2 teaspoon celery seed
- 2-5 teaspoons crushed red pepper flakes, optional (I use one teaspoon per jar)
- 4 pint jars with lids and rings (I am using 12-ounce jars because I like the look)
INSTRUCTIONS
Combine vinegar, water, salt, sugar, peppercorns, mustard seeds, bay leaves, dill seeds, and celery seeds in a 4-quart saucepan. Bring to a boil over medium high heat.
While the brine is heating, prepare asparagus by trimming spears to fit into prepared jars, leaving 1/4 inch of headspace (make sure to watch my canning 101 video to prepare for canning). If using the crushed red pepper, put a teaspoon at top of each filled jar.
Once the brine has come to a boil, stir to ensure the salt and sugar have dissolved. Pour boiling brine into prepared jars.

Place prepared lids and rings on and put directly into a boiling water bath. Process for 10 minutes. Remove from canner and let cool for 12-24 hours before removing rings.
Make sure all have sealed and place in the refrigerator if any have not.
Store sealed jars in a cool, dark area for up to one year. These are delicious any time after one week!

Thank you for the video, someone left a beautiful entire case of Asparagus on my porch this morning and I came looking for a recipe. Made 20 pints so far, second batch I left out the pepper flakes & added dried organic lemon verbena to the brine. Smells so good and I love lemon with Asparagus.

I just found your channel and went over to ur page to see what else u have but am disappointed that I don't see a lot of canning vids, of course what I did see, I absolutely love but I want to see more of ur canning vids, please, please do some more canning, I'm not alone in saying that you have such a natural way of teaching that actually make us ( students) want to come to class (KZfaq) to learn and eagerly want to rush home and can, lol. Difference in "regular" salt & Canning/Pickling salt is that there is no additives or iodine in C/P salt which can make pickles go slimy and brine turn cloudy

I love to can and yes you are right after a canner has gone through so much effort to cut the veggies and heat up the brine with exciting flavors...it truly is awesome to hear the canning lids popping to say that they have sealed!!!! A sealed jar should last 9-12 months stored in a cool dark area. Even after this time they will be good just start loosing some flavor.

I am loving these videos. I am in Palm Springs, and still learning planting techniques in the southwest, and in a drought. However I am having a small but bumper crop of veggies, herbs, and fruit. I don't have enough for canning. What I do have is figs, and kumquats. Any ideas about figs? We usually get 2 harvests from our fig tree, which is setting fruit now. We also have an olive tree that was planted in front of each house in our midcentury neighborhood back in 1962. The neighborhood group is looking into getting a company from northern California to come south and set up an olive oil press for each homeowner to have fresh olive oil pressed from their front yard trees.

Figs are my absolute favorite fruit!! You are so lucky to have a tree, I love fresh figs with Greek yogurt and and drizzle of balsamic vinegar glaze or they make great preserves!

Tried your Pickled Asparagus recipe today, and thought I'd share some of my experiences. 1st, four lbs. of asparagus fit nicely into four 24 oz. jars (1.5 pint jars). 2nd, on a hunch, I doubled the brine recipe, and had only a small splash or two left over. Now, I have the irritating wait before I taste the final results. Will let you know what my taste buds "think."

Too bad I let my asparagus spoil! ): I'm normally not wastful so it hurt when I found out they spoiled. We recently moved to a house with a bigger garden and now we have a large vegetable garden with potatoes, beans and oniouns and even a greenhouse with a lot of tomatoes in every kind and different melons, cucumbers and pickles (: So I'm looking forward to our first produce and ways to keep them fresh/edible for a while longer!

Well I cut the asparagus to fit the jars I was using. Any pieces I just ate in ways I enjoy asparagus or you can fill a jar with the pieces and pickle them as well!

You may want to consider using a product called, "Pickle Crisp." (calcium chloride). It helps to make pickles firmer; thus, giving them a crisper texture.
