Asparagus season is so short and is gone before we know it. Preserving asparagus can extend the season for us all year long. Pressure canning asparagus is exceptionally easy and is a worthwhile addition to our pantry shelves. Grow your own or buy it fresh and put some up for later in the year.

For anyone who's interested, 1.5 pint jars are great for asparagus. It's roughly the size of a wide mouth pint jar but 50% taller.

I just planted asparagus for the first time. I’m excited so see how it does in the next couple of years. I’ll definitely be canning some.

That is fantastic. We added about 30 new plants last year and they are sending up their first shoots--we don't harvest those. Hopefully we can find a solution for the darn gophers who also love asparagus roots!

This video came at the perfect time! I just bought 2 big bunches of asparagus ($.99/lb) and wondered what to do since my freezer is on the fritz. I will add it to "the list" (I have 2 HUGE pork butts and 2 smaller beef roasts to can). So, canning it is! My canner will get a workout (and so will I)! But definitely worth it. The semi-good news is that I had already canned *most of the meat that was in my freezer before it started acting up. I hope to see more preserving of your garden goodies.

I am so glad you talked about letting it do a natural release again. I got an older Power Pro XL Pressure Canner. Found the instruction book. Says to do release after time done, But i do a natural release. Thank I feel way more confident now.

Thanks for reminding me I have to go pick. I bottle mine in the 1 1/2 pt jars. If there is tender parts on the bottom left I cut to pieces and bottle or roast

Enjoy your videos, would live to see a comprehensive presentation on "all" kinds of canning lids. Would like to see the plus and minus of all lid types. Keep your videos coming.

One thing I can tell you @Susan Orris is to stay away from the Chinese lids on Amazon. I belong to another canning group, and I've seen and heard of some of these knock-offs do not even seal or the lids buckle under pressure.

My fear is we are going to see canning supplies showing up from all over this big blue marble that ate not something any US. canner would want to use.

@@MaryWehmeier On that note, Jeni Gough, who has a you tube channel, just recently did a video using PUR jars and lids. ACE Hardware is now using them instead of Ball (not sure if there is a manufacturing problem with Newell, who owns all of the canning manufacturers). After purchasing, she discovered they were made in China. She went ahead and used them and they turned out fine. My main concern would be what is *in the jars/lids, since they don't go through the inspection process that "Made in the USA" ones do.

Love your work, always hit the like...ty! Never done asparagus before. Always water bath. I have a big ol canner, but can't find my jiggler...arrrgghh I have a manual canner I have electric pressure "cookers"...not canners. Can I use my stainless steel manual canner OR my electric pressure cooker to do this job??? Thanks again, hope you answer!

Regular pressure cookers are not safe for pressure canning unless they hold 4 jars--either pints or quarts. You can probably buy a replacement jiggler for your other canner.

As always, love your video. Just a thought - For a future video, maybe a review of some of the different brands of lids. I have always used Ball lids, and I trust Kerr, but what about those nameless ones?

I do want to do a video on lids. I am still thinking through it. There were sure a lot of bad ones on the market during COVID and I managed to buy some--they were awful! Thanks for the idea!

Does the asparagus come out soft? I just planted and another 7 crowns. The package said there were 3, but when I opened it, there were 7. I love asparagus and can't wait for mine in the garden to get old enough. My first ones I planted last year were 2 yr crowns. Some shoots came up and we ate them, but next year I should be able to eat more. Thanks for all you do and teach. Thanks for sharing and have a Blessed Day!

Yes, it is soft. But the taste is OK. Sounds like you will have lots of asparagus by next year!

I’m not a fan of asparagus but I just love your videos! I have also noticed no siphoning in the IP max! An added bonus😀

It is important to follow the procedures recommended by the USDA--they are the ones that tell us whether it is OK to use raw pack or hot pack.

I used low cost lids on my asparagus and got black pitting and pinhole marks on the underside of the lids. Internet says it's not harmful, but it sure is ugly!

The Max does not. It holds 4 pints.

Is the Instant Pot Max only made as a 6 quart or is a large version of IP Max available? Also I would like to see you can meat in the Max, please. I like that it allows you to can in smaller quantities.

The only version of the Max that I know of is the one that processes only 4 pints at a time. Difficult for a larger family, but just right for Jim and me!

Thanks, Lyn. We do grow asparagus and the gophers really enjoyed dining on the roots over the winter, so our harvest this year is way down. I keep putting in new plants. We need to find a better way to control those pesky little critters!

Question: Should food that was home canned be boiled 10 minutes prior to using? Watched a popular KZfaqr’s canning video and that was the 1st step listed that must be done to make sure food poisoning won’t happen. If we follow proper canning techniques as you’ve demonstrated (especially the killing botulism series), wouldn’t the jar’s contents be safe? Thank you for your professional lessons given in most enjoyable manner. I get so excited when I see a new video from you was uploaded.

What that person is referring to is that if there is botulism toxin (not spores) in the canned food, boiling for ten minutes destroys the toxin. You can do that as a safety precaution if you like. Even though I am very confident that I am a safe canner, I will do that--especially with green beans and potatoes just to be safe.

Miss Pam, Love asparagus week!!! Hooray!!! I thought I heard you say you would add at the end why you feel safe to use I Pot Max as pressure canner at your elevation, however there was nothing at the end. I saw a video where they said they read that an I Pot did not get up high enough steam to get bocholism (sp?) killed in the jars. I do know that you are very educated and are a up against the mountain canner. Please make a video about I Pot and why you feel that it does kill all germs please???

I love canning but also prefer asparagus not canned. They’re almost mush after being cooked that long. Is there anything else that you had a similar experience with?

I prefer most things not canned, but in difficult times, we may not have that option, which is why we show various ways how to preserve foods.

I am new to canning and I got an instant pot max. I used it the first time today to can black beans. I poured the water in like the book said. When it came under pressure about 15 mins in I got an alt error message. I called and the man on the phone said I needed more water. Have you ever had this happen

No I haven't. Be sure the water level comes half way up the jars, which is what the instruction book says. If it keeps doing that, I would return it for a new one.

Like you, I’m also not fond of canned asparagus. So my question is, does home canned asparagus taste different than commercially canned asparagus?

I have the Presto Digital Canner. Is it safe to use? I was using it to can, but I stopped because I read that it wasn’t safe. I have not had any problems with it & have found other KZfaqrs using it. Is the IP safer than the Presto Digital Canner? There is not enough room above my stove to can (range hood & cabinet), so it’s either an electric canner or no canning. Thank you for reading this.

I have not personally tested the Presto digital, so I am reluctant to make a recommendation. I can tell you two things about that canner. 1--Presto is a good solid brand and they have been in the pressure canner business for a long time. 2--They did use deceptive language regarding that canner leading folks to think it was USDA approved. I would personally be more confident using it at lower elevations than at higher. It does not have an external indicator for either pressure or temperature, so I would not use it unless I tested it like I did the Max. I almost bought one to test but found out that the instructions say not to use it for pressure canning pints, only quarts. It holds 5 quarts and if I was going to can 5 quarts of anything, I would just use my regular Presto pressure canner. I would want it for pints. Not sure this helped answer your question. I did test the Max at our elevation (5000 feet) and know that it is safe for us to use for our family.

@@RoseRedHomestead Maybe I have a newer model but it does pressure can pints. The pressure is either low (for water bath canning) or high (for pressure canning). It seems to work like the IP in that there is only a natural release & extra time in that release is built in. I have a digital copy of the manual if you would like to look at it, or a digital copy can be downloaded from the site. I just double checked the manual … it will pressure can half-pints, pints and quarts, both wide and regular mouthed. I have used it to pressure can & the food comes out very hot and so far the seals have held (I don’t put the rings on during storage). I have only had it a few months, but I don’t want to waste time & money if it’s not safe. Thanks for your reply. BTW, if you are an experienced canner the ‘hand-holding’ might prove annoying, but I am grateful to be able to can.
