Fresh Everyday Salsa Ingredients:
4 Tomatoes, quartered
1 Onion, roughly diced
2-3 Jalapeno Peppers
3 Garlic Cloves, peeled
Cilantro, handful
Apple Cider Vinegar
Fresh Lime Juice
Ground Cumin
Smoked Paprika
Salt, Pepper to taste
Ancho Chile Salsa Ingredients:
2 large cloves garlic, roughly chopped
1 large jalapeño, roughly chopped
½ White Onion, roughly chopped
½ Roasted Red bell pepper (jarred is fine), skin off
3 whole *Ancho chilies (soak in very hot water for a few minutes); or 2-3 Guajillo chilies
1 - 14 oz can whole peeled tomatoes, or 4-6 Fresh Tomatoes
1 Tbsp Apple Cider Vinegar
1/2 tsp sugar
1-2 tsp salt (to taste)
1 tsp smoked paprika
1 tsp ground cumin
1 handful cilantro leaves, chopped
Juice of 1/2 lime
Roasted Tomato and Chile Salsa Ingredients"
4-6 Medium Tomatoes
2-3 Jalapenos
4-6 Chile de Arbol
2-4 Chipotle (dried/smoked Jalapenos, aka Morita) Chilies
½ Onion, left intact
2 Large Garlic cloves
Juice of ½ Lime
¼ Cup Apple Cider Vinegar
Handful Cilantro
1-2 tsp Sugar (to balance tartness)
1 tsp Smoked Paprika
1 tsp Ground Cumin
Salt/pepper to taste

About Chef Walter
With a strong background in the creative and visual arts, Chef Walter’s style can best be described as “gastronomic bistro”. Having completed a “Diplome de Cuisine” at the famed Le Cordon Bleu Culinary Institute in Paris, as well as the highly rated Walnut Grove Cookery School in France’s Loire Valley, Walter relies on his French training and techniques to assure top quality, but remembers his Texas roots and always cooks from the heart! During week-long Adventures, Walter always includes a mix of the Classics and Regional recipes, as well as a healthy dose of original recipes.
