Delicious Vadai! They're vegan, and gluten-free friendly.
1 Cup (225 grams) Chana Dal, soaked for 4 hours, drain well
1 tsp Fennel Seeds, lightly toasted
1/2 tsp Black Pepper
3/4 tsp Sea Salt, or to taste
1 Medium Red Onion, finely chopped
5 Cloves Garlic, finely chopped
3 to 4 Green Chilies, finely chopped
5 to 6 Dried Red Chilies, thinly sliced
1 inch Ginger, peeled & finely chopped
A Handful of Coriander Leaves, finely chopped
2 to 3 Sprigs Curry Leaves, finely chopped
Vegetable or Peanut Oil, for deep-frying
* Tips
Fry on moderate to medium heat
Do not add water to the dal mixtures

Is chana dal also known as yellow split pea? Do you soak the dried chilies?

Yes, they are the same. Dried chilies, a quick rinse & wipe dry. Thanks.

Mine, couldn't bind together. End up I add flour. Then i got hard texture vadai. Taste is spot on. Why? I live in oversea. Is chana dhal = yellow split peas? 😬 Or I bought the wrong thing

Chana dhal is not the same as yellow split peas. But it's a good sub. Perhaps soak the dhal a little bit longer, especially during Winter month.

Is it possible to airfry instead of deep fry?

Do it as it is. Deep fry will gives you crispy and good flavour..
