Learn how to make Tijgerbrood, or Dutch Tiger Bread: delicious white bread with a crunchy top that resembles the pattern on a tiger, or leopard. Because the crust has so much crunch, it's often called Dutch Crunch Bread as well.
When I moved to the United States, I really missed the freshly baked artisan loaves of bread that we used to get from the local bakeries. This bread, "Tijgerbrood" (literally translated Tiger Bread), has a characteristic crust with a tiger, or leopard pattern on it! This crust adds a ton of crunch to the bread, which is why another name I have seen for this bread is Dutch Crunch Bread. I still remember that on vacation, my dad would ride his bike to a baker in town (30 minutes each way), and bring this bread with him. Still warm, we'd simply eat it with butter, sometimes some sugar.

I'm going to make your recipe on stream and I'll link your video. Instead of making 2 loaves could I make 4 bun shapes (for sandwiches) and just use the same the roll and fold technique?

Hey Toine ik zou heel graag zelf tijgerbrood maken, maar als beginnende hobby bakker heb ik geen bakblik voor brood. Wel heb ik een mooie gietijzeren pot. Ik heb al vaak gezien dat men zuurdesembrood in zo een pot maakt, die moet dan wel gloeiend heet zijn… zou dit met tijgerbrood ook gaan? Maar wat dan met de stoom? Laat ik het deksel van de pot?

Je hebt geen bakblik nodig. Ik leg ze gewoon op een bakplaat met bakpapier er op.

Yes, you are far away but if you ever come to my "hoek" in Canada, you are welcome to come! Thank you for your videos. One question----I make almond paste with one cup almond flour with one cup flour. Will I need two full eggs?

I've only ever made almond paste with almonds, sugar, and egg. Then, after it's rested for a night, I will thin it out with an egg yolk and some water before using it.
