I created a similar recipe when living in Costa Rica. I did everything by hand, meaning no food processor. And they came out delicious. Of course it takes more time....for instances all I had was a fork to mash the chickpeas and a serrated steak knife to chop the onions and parsley. So if you have the will, you can always, for the most part, figure out a way around modern appliances. Use your ingenuity and you will be surprised at the results. Thank you food wishes for another great video and recipe. I have become addicted to your videos and watch at least one a day.

This freezes well. I always make a big batch and add the baking soda to only what I will use the day of... I simply add the baking soda to the unthawed mix prior to cooking...In fact I prefer the mix that has been frozen, it seems to be tastier.... IMHO shallow fry method is the best way to cook these 💕 I love falafels especially when Im on a no-meat kick, I've seen vids making these with lentils which I shall try soon...Chef John your my fav cooking show, I love your puns and sense of humour thanks for your videos 🎉

I’m Chinese and have never had falafels nor related them to my own cuisine in any way. Yesterday I made some soy milk and had some soy beans pulp left over (basically soaked soy beans processed with water and squeezed until no liquid left). The way Chinese usually make use of these soy milk byproduct is to mix them with some starch/flour, cilantro, shredded carrots, then season with soy sauce, sesame oil etc, shape them into balls and deep fry. I made those soy beans pulp balls for dinner and my husband said “oh you made falafels!” Just amazing how cultures think alike.
