INGREDIENTS ---- (All can be found in your local grocery)
Pico De Gallo (Salsa)
3 Garlic Cloves minced
1 tsp of Fresh chopped jalapeno Pepper
¼ cup of diced red onion
2tbls of fresh cilantro chopped
2 ripe tomatoes
1 ½ to 2 tbls of freshly squeezed lime juice
pinch or salt
pinch of ground pepper
Corn Slaw
½ cup of mayonnaise
2-3 tbls of freshly squeezed lime juice
2tbls of fresh cilantro chopped
1 ½ - 2 tbls of agave or honey
2 cups shredded red cabbage
1 cup fresh corn kernals
½ tsp jalapeno
1 avocado diced (for topping, not slaw)
Fish
1lb - 1 ½ lb Alaskan Cod (or any other white fish like Tilapia)
1 tbls of ground cumin ( season fish with half add half to batter)
1tbls of chili powder (season fish with half add half to batter)
1tsp salt
1tsp pepper
2 cups Tempura batter
Water (for tempura batter, follow your box directions)
8-10 corn tortillas
Vegetable oil for frying
