Enjoy making this lovely Eggplant stew... you can make this dish with any protein you like or no protein at all and enjoy it as a vegetarian dish over some basmati rice !

Preparation:
- Wash and soak yellow split peas for 30 minutes
- make your saffron by grinding it and adding 2 ice cubes and a little bit of water
- chop your onions
- slice and fry eggplants using the method above...use link above
Ingredients:
3 medium size eggplants
700 grams stewing lamb or any protein you like
1 large onion
3/4 (three forth) cup Persian yellow split peas
2-3 dried limes and some dried lime hearts
3/4 (three forth) cup strained tomato or 2 tablespoons of tomato paste
Salt and sugar to taste
Spices : 1 teaspoon turmeric, 1 teaspoon cinnamon, half teaspoon black pepper, 1 teaspoon paprika, 1 teaspoon ginger powder.
Saffron
1 tablespoon rose water
