Here's a simple recipe for Ginger Scallion Sauce to be had with Claypot Chicken Rice, Steamed Fish, and Noodles. It's slightly tedious, but the result is amazing! Make a large batch - this sauce will make it worthwhile! Enjoy! Ingredients & Utensils ↓
Ingredients:

I love how you make your ginger scallion sauce different from the normal Cantonese style by adding oyster sauce to it. That's what make yours so special. Cooking is all about creativeness, deliciousness and satisfaction. I still prefer your style compared to many others on KZfaq. 🥰

First, a grade on the video quality and watchability: *A+++++++* No annoying music. The only sounds are true kitchen sounds and your voice (a pleasant one, for sure). I wish all videos were done in this fashion. Such pleasant viewing. Second, this recipe looks AMAZING. It's the first time I've seen a ginger-scallion sauce recipe, so I'm not familiar with the taste, but WOW! How do you not like everything in this? I'll be sure to make some, hopefully soon.

Hi Somjit, I’ve made this sauce 2 days ago and used it for steam fish, was delicious. Made the same amount as you and kept in the fridge 🤭😁

Hi Sha Cunning, thank you for the comment. So sorry, I just noticed your comment. I've never kept it until it has spoiled - it usually finishes in my household before it spoils. When kept in the fridge in a clean, air tight container, I found that it can last up to 6 weeks. Hope it helps 😀

Hi Tay Evelyn, thank you for the comment 😀 I'm not sure as I've not tried it. Usually I don't mix garlic and ginger together in a sauce as they are both herbs with strong aromas and taste. Hope it helps 😀

Interesting you put a little bit of oyster sauce... in cantonese cooking, usually this dipping sauce doesn't have that... sometimes people add like a dash of sesame oil or use garlic

Can it be kept in the freezer? How long can it last if it's being kept in the freezer? My friend suggested I finish off within days as he said that the scallion might rot. I have just prepared it today but yet to taste it.

Hi L.S. Yew. Yes it can be kept in the fridge or freezer. The last time I made this and kept in the fridge for about 6 weeks. Yes, your friend was right, the scallion can go bad easily if it is raw. However, if you wish to cook and keep it, I would recommend to make sure that the scallion is cook properly for at least 2 minutes with the ginger. I hope this helps. Happy cooking 😊

Hi Fin Ger, thank you for the question 😄 This sauce lasts quite long in the fridge, maybe around 6 weeks. I would recommend consuming it within 2 weeks, however, as it's best to have it fresh before discoloration occurs. Do note to store in a clean and dry jar, as well as use a clean and dry spoon when consuming it. Hope it helps 😄

Hi 真理Truth, thank you for the comment 😀 I've not tried it before, but I think it can be frozen. However, it needs to be fully thawed before it can be consumed. I will suggest to leave it at room temperature to thaw on its own. Hope it helps 😀

Hi sbs205. Thank you for the questions. I usually cook this with the claypot chicken rice ( kzfaq.info/get/bejne/f8emls17yNfPg3k.html ) For chicken rice I usually serve this sauce as the condiments ( kzfaq.info/get/bejne/gad4ipx43JqddX0.html ) As for the soup, I don't recommend to add the ginger scallion sauce as it contain cooking oil and it can cause the soup become very oily and not very appetizing. Hi wu mao, thank you for trying this recipe 😃 I've found when kept in a clean, air tight container in the fridge, it can last up to 6 weeks. Make sure to use a clean, dry spoon to scoop the desired amount from the container when consuming. Also to note, that usually by 2 weeks, the colour may fade a little (turn a little grey) - however it is still good. Hope it helps 😃

Hi Huiting Lee. No need, just warm will do. If oil is too hot it will create a hot oil splashing when putting as the blended ginger contain a bit of water. 😀

I think this version of ginger scallion they have made is it a bit more involved than the most basic and traditional version which is literally just chopping up gingers and scallions into small bits, adding salt atop them, and then pouring heated oil over them and mixing together

@presanamcgurk6080. Usually I pack it in a small portion for one time cooking and then keep them in the freezer. Take out only what need to be cooked ad the rest can last really long even for a year. 😀

Hi HeroKing, thank you for the comment 😀 I'm not sure what you mean - but this ginger scallion sauce lasts up to 6 weeks in the fridge. I do not suggest keep it in the fridge longer than that as it can become stale by then. Hope it helps 😀

The fastest way to remove the ginger skin is scrap it using spoon.
