This is solid. Consider putting fontina cheese in the roll up. It complements the other ingredients (sage and precutto); also you can use a port wine for a sweet and bold flavor to balance out the palate. Just some options to think about

@@ddubsr5886 I've found people in the US like it with fontina and a sweeter marsala sauce that's finished with port. It sells like crazy from a couple kitchens I've worked in. I know it's the bastardized version, but it works. Although the way Steve cooks this makes it look like absolute perfection.

We're Italian and I used to make this for my mom's birthday every year.. it's one of her favorites. I use chicken/proscuitto and do the roll up version. I've gone with seafood for her the last couple years but I'm going to have to make this again soon!

It doesnt feel weird to put the sage on the chicken and then eat it? It feels that you should take off the leaves before eating but i dont know

@J1 I've actually never done the sage on top version, but I will be tomorrow! It's my mom's birthday exactly a year later and she requested this exact recipe from a Food and Wine link, so even though you probably won't see this, I'll report back lol. I love sage but I was unsure about it too. We will see!

Just made this, it rocks! We ended up using a sweet white wine and put some of the sauce in our pasta. Tastes amazing!

Pro tip if you make this: a wider knife (like a chef's or santoku) helps make the cut more even and inhibits ridges left in the cutlet. When he is mounting the sauce (adding butter to the reduction), take notice that he swirls the pan instead of using a whisk or spoon, doing so makes it cloudy instead of clear. Also, that crispy prosciutto looks awesome!

Great video ... I've made saltimbocca with both veal and chicken for years using your method exactly (the flat version) and I can assure your viewers that it's one of the most delicious dishes you'll ever have. As a suggestion maybe someday you could do a Beef Braciole video. Keep up the good work.

You ought to give duck breast a crack. More flavourful and moist than chicken breast. Do so with the skin on and score it before cooking. As the fat renders pour (or spoon) some of it off and save for future use.

Good one, bud. I haven't made this in a while. I never loved the rolled version. I like sneaking that sage in between the prosciutto and chicken. Your sauce looks fantastic!

There is a Mediterranean deli I go to in London that makes Chicken Saltambocca sandwiches in Ciabatta or faccacia bread. A little olive oil, Dolcelatta cheese, sundried tomatoes, and Cucumber and Lettuce....for me it's literally the world's best sandwich.

I'd definitely go for it.. I actually just looked up where they serve Saltinmbocca near me and the restaurant served it as pork only and it's Italian so.. 🤔😀

I am not a pro chef, but I see food as a canvas from which we can create whatever pleases the palate. With deference to traditional recipes, many of these come from very humble, rustic places, where certain proteins weren't always available. I imagine that home cooks would substitute whatever they had and enjoyed it thoroughly.

I made this for the first time and it was delicious, however, the prosciutto was only crispy on the ends. The crispiness added so much to the dish I wish I could of gotten the whole piece crispy... Would I need to fry it for longer or shorter to get a uniform crispiness on the proscuitto? I fried it for a bout 2 and a half minutes since my chicken was a bit thick.

Have you ever tried rolling it the other way around? That way the proccuto would be on the outside and so it'd crisp right? Just a thought, the recipe looks great though! I might try it this week.

It may sound good, but I wouldn't. Prosciutto crudo is not meant to be cooked like bacon. It's already very salty and so thin it becomes incinerated in an instant. That's why in Italy they don't do it for this recipe OR cook pizza with it. On a pizza it's added right out of the oven.

I also have a dumb question - the chicken cools as you prepare the sauce in the video. Do you eat it cool, or normally keep warm in an oven, or re-heat? Looks delicious btw!

the chicken will be "rested" so the juices don't fall out when you cut into it. the application of the hot sauce at the end will be enough to warm up the dish. additionally...one small hack that some restaurants use is to serve on a warm plate, not a room-temp one.

Made this tonight. The sage was overpowering. Did I do something wrong or is this as intended? Wife likened it to biting a Yankee candle... Would this also work with basil? Or is there something i should try differently next time?

Omit the first applicator of sage on the chicken or minimize it. Some people don’t love the flavor of sage. Or just keep the fried sage so you can add the flavor as you wish

This reply is coming a bit late, but you usually want to use dry marsala for cooking. You can always add sweetness if you feel like it needs it, but you can't take it away.

Your videos have gotten muuuchh better. Great content. I just want to say that you having to bend to talk to the camera hurts my eyes. In fact all the footage from that angle is very uncomfortable to watch.
