To make our Easter dinner table more festive, we are making homemade beef mortadella!! 🍅🫑🧅🧄🌶️
Ingredients:
- 2 pounds beef tartar meat (Found from Armenian Markets)
- 2 cups bread crumbs
- 4 eggs
- 2 egg whites
- 2-3 garlic cloves minced
- 2 tsp. salt
- 1 tsp. red pepper
- 1 tsp. cumin
- 1/2 tsp. black pepper
- 1 cup raw pistachios
- 1 cup vegetable oil
- 1 cup water
For the broth:
- 1 cup vinegar (I used apple cider vinegar)
- 4 1/2 cups water
- 1 tsp. salt
- 1 tsp. red pepper
- 1 tsp. cumin
- 1/2 black pepper
- 4 garlic cloves minced
Instructions:
1. Begin by putting the meat in the mixer. Add half the breadcrumbs, all the spices, garlic, 2 eggs. Mix on low/medium speed.
2. After 5 minutes, add in the remaining bread crumbs and mix until combined.
3. Meanwhile, make the broth. In a large pot and under low heat, add water, vinegar, spices, and garlic. Allow to boil and turn off.
4. When the meat is mixed in the mixer, transfer to a tray to mix to with hands. Slowly, add water while mixing with hands. (You can also add the water in the mixer and skip mixing with your hands).
5. When the meat is ready, separate it into smaller round shapes. I made 7 mortadellas.
6. Pat down the meat, line some pistachios in the middle, fold the edges and close the sides of the mortadella. You should get a cylinder shape.
7. Use the egg whites and some water to smooth out the outer covering of the mortadella. It should be smooth and shiny.
8. Once all mortadellas are done, let rest for about 1 hour.
9. After resting, begin to fry the mortadella until the outer covering is a dark brown color. Turn on the heat of the broth to warm up.
10. Then, transfer the fried mortadellas to the broth.
11. Allow to cook for 1 hour.
12. Remove the mortadellas, let cool, slice and enjoy!
