off their website Ingredients 500g carrots, peeled 500g parsnips, peeled 2 tbsp olive oil 4 tbsp clear honey 2 tbsp wholegrain mustard 4-6 sprigs thyme Method 1. Preheat the oven to 220˚C, gas mark 7. Place a roasting tray in the oven to heat up. 2. Meanwhile, slice the carrots and parsnips lengthways into halves or quarters so that they are evenly sized. 3. In a large bowl, whisk together the olive oil, honey and mustard. Add the vegetables and thyme to the bowl and toss to coat. 4. Place on the hot tray and roast for 30 minutes until the vegetables are tender and caramelised.

I made this to go with Christmas dinner 2022 and it was delicious - everybody loved it! I'm making it again tonight to go with hamburger steak, peppercorn gravy and garlic mashed potatoes - yum! So happy I clicked on this recipe!

I line my roasting pan with baking paper and start my veg off with just olive oil, half way through the cooking time is when I add the honey. I find if I add the honey too soon they burn.

Not a secret but as with boiling any veg first it just makes them softer, but at the same time you lose a lot of flavour, roasting raw any raw vegetables the flavour intensifies far more with the natural sugars within the vegetable hasn’t been boiled out in water first.. agreed with boiling potatoes first before roasting, but then a potato isn’t classed as a vegetable

Personal choice of course, but I've always found that roasting raw veggies without parboiling yields greater flavour.

Did you change the roasting tin half way through? The initial one looks stubbier and shorter and the veg is stacked up, when you take them out of the oven it looks like a shallower and longer tin. Which is essential btw, you need them spread out not bunched up or they'll steam not roast.

Good but as others have said no reference to temp. Guessing about 220C or 200C fan assisted.

Temperature from the website = 180 deg for 15 mins. Then raise to 220 degrees for 45 mins.

I think the recipe is given in centigrade but I believe that in Fahrenheit it is 356°.

If you measure the oil first and then the honey, the honey will slip offthe spoon much, much easier.

This is glorious, I been tryin to find out about "what can i substitute for parsnips?" for a while now, and I think this has helped. Hi Alfie, please preheat the oven to 180ºC, gas mark 4. Tip the parsnips into a large roasting tin. In a small bowl, whisk together the oil, mustard and honey. Season and pour over the parsnips, toss to coat, then roast for 15 minutes. then increase the oven temperature to 220ºC, gas mark 7, then add the carrots and toss again until everything is coated. Return to the oven for 45-55 minutes until golden and tender, turning everything halfway through. Serve with a scattering of thyme leaves and pomegranate seeds, if liked. Enjoy 😋 ^Nicki
