By request, here's how to make Ma-yu, or burnt garlic oil for tonkotsu ramen. This bitter oil tastes terrible on its own, but for some reason when added to tonkotsu soup, it elevates the flavors to a whole nother level. A lot of ma-yu recipes call for vegetable oil and or sesame oil which is fine, but this is a very easy to make version of Ma-yu that even beginners can pull off thanks to the ingredients.
Ingredients:
Lard
Dehydrated Garlic chips

Oh, I thought the black garlic oil made from garlic that fermented until black. I'm afraid of burnt foods, so I'm gonna try using fermented black garlic instead but just gonna fry them until crispy and blend. Hope this turns out fine, lol.

I would strongly recommend doing this outdoors if at all possible. The wonderful smell of cooking this garlic is powerful and will fill your entire home. If you put it in a blender (or use a hand blender) this will add to the aeration of the burnt garlic odor.

Thanks for the mayu video! I like the science behind why you've chosen to use certain ingredients over others (e.g. using the garlic chips over fresh garlic, picking lard over vegetable oil). I think because of that, a Top 5 Common Mistakes / Beginner Tips while making ramen video or something along those lines would be interesting to watch

Went to a restaurant that had a garlic tonkotsu shoyu ramen and uh... yeah no ramen has compared since. Thank you for making this tutorial! This combined with your shoyu tare tutorial, and your tonkotsu tutorial.. basically, I'm ready to make some of this at home!

I just have to say, I've been making Mayu since I first saw this video a couple years ago and it is 100% my favorite condiment for ramen that I have come across. Thank you so much for letting me know of this amazingly simple recipe and condiment :D
