This recipe makes me very happy!
Making fresh gluten-free pasta is much easier than I imagined, I spent a lot of time buying ready pasta because I felt that making it at home was beyond my abilities. Lucky for me I was wrong!
Gluten free pasta made following my recipe is delicious - it's an Italian style pasta, it doesn't take water, only eggs, hence its unique flavor! No ready mix, no powdered milk, just simple ingredientes and it´s made by hand, no machine needed!
To make fresh gluten-free pasta - regardless of its shape - You will need:
* portion for two adults
90 grams (half a cup) of rice flour + some more to get to the right consistency
80 grams (2/3 cup) of sweet tapioca starch
30 grams (1/4 cup) of potato starch or cornstarch
1 teaspoon xanthan gum or 2 tsp of psyllium husks
1 tablespoon of oil
3 small eggs (or two larger ones + a part of a egg)
