Inspired by received questions I bring you 2 gluten-free homemade pasta recipes with NO rice flour.
Rice flour appears in almost all gluten-free recipes, but there are those who are allergic or intolerant to it or simply do not have rice flour at home on a given day.
So for such cases and for those that are simply curious,
I will show how to make perfectly tasty and elastic homemade gluten-free pasta.
You can make using a pasta maker or simply by hand.
In this video I make my gluten free homemade pasta fully by hand.
For 2-3 people you will need:
1) 120 grams of tapioca starch
60 grams of potato starch
30 grams of chickpea flour or yellow/red lentils
4.5 grams (1.5 tsp) of xanthan gum
3 medium eggs
1 tablespoon olive oil or other vegetable oil
2) 100 grams of fine corn flour
50 grams of oat flour or quinoa or buckwheat flour
60 grams of potato starch or tapioca starch (or corn starch)
3.75 grams (1.25 tsp) of xanthan gum
3 medium eggs
1 tablespoon olive oil or other vegetable oil
