Hey mate just watched your vid and it is by far the best one on here that I have found so far. I am doing one on my own today so the info is going to be a good start just have to remember the steps. Old school mate. Just like my first job in the Slaughterhouse in Greece. All on the ground, back breaking work. Easter week with the worst. Do a couple of thousand a day almost on a small manned crew. Still get nightmares thinking about those 22 hour non stop days.

Final questions before I get to work tomorrow :) Do you tie off the gullet and do you tie off the bung? Thanks. A fellow I know says it's not worth keeping sheep off the paddock because if you do then they are more likely to regurgitate and he doesn't bother tying off the gullet.

No I don't bother to tie it up. Yes some will regurgitate, but I've never had a problem with getting it on the me. And I don't do the rear end either. If you're worried about it, it might be best to do it anyway. Cheers

Great video. When I started doing this 20 years ago I was trying to imitate the more experienced guys trying their ways but eventually I ended up with my own way of doing it and I think that's why they say there's many ways to skin a cat or a lamb in this case so everyone has to figure out the best way for them selves I guess.

Tried back legs up for the first time today, ended up peeling off the whole outer membrane somehow. Never done that starting front-legs-up. Is there some trick to punching up the hind legs?

I have yet to skin one without peeling of the membrane as well. But I've always done it back legs up, and pulling from top down. After watching this clip I think the trick is to start punching from the front legs towards the back - whether you are doing it front or back legs up. This way the membrane doesn't start separating while if you start pulling down the back legs it always pulls for me. I have three lambs ready to be slaughtered in a couple of days and am definitely replicating Benny's method this time. We'll see if I get some more success!

Totally agree. The kind of stress is dramatic for these animals and it has an affect on its muscles too . I've been teached that to the butcher school .. Im a professional butcher for over 25 years . you are fast and accurate in what you do, but please don't do that.
