In this video, Roland is going to how you how to cook a really simple Chinese stir fry using basic ingredients such as black pepper and beef with the other usual ingredients. Yes, you can cook restaurant style black pepper beef at home too. Just follow this recipe to achieve it.

Ingredients:
Serves 4 - 6 pax
Mix the ingredients below well and marinate for 20 mins
======
350g of chuck tender beef
1 tablespoon of oyster sauce
1 tablespoon of light soy sauce
0.5 teaspoon of baking soda
2 tablespoons of cornflour
A few dashes of white pepper
1/4 cup of water
Other ingredients
==========
1 tablespoon of coarsely pounded black peppercorn
40g of butter
Some cooking oil
1 medium size red onion
1.5 tablespoons of oyster sauce
0.5 cup of water
0.5 teaspoon of salt
1/4 teaspoon of sugar
4 stalks of spring onion
1 tablespoon of premium dark soy sauce
Some cornstarch solution
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)

I just tried it and it's really good. Taking a tough cut of meat and making it very tender. This over steamed rice, you cant go wrong.

How much cornstarch solution did u add? As in how many tablespoons of corn flour to water? Btw can I add sesame oil to the sauce would u recommend 1tsp? Will cook this dish tmr. Looks yummy. I see Black pepper beef is usually cooked with onions & bell peppers outside but this version looks really good too.

Hi Wendy, deep-frying it first will help to cook the beef evenly on all sides plus helps to seal the juice within each slice of beef. If you don't wanna deep-fry, that's okay too but it may not yield as tender beef as deep-frying. Even then, it should be fine. Happy cooking!

I have an old Chinese cookbook that I love that might call this pre-cooking technique "velveting." In the book the author says it can also be done in water, but of course, I will do it the Spice N' Pans way!

Yep. Another recipe I have to try in my quest to make the tenderest beef strips known to man. Also, the banging sounds from next door are not due to renovation work: it's the neighbours wild with hunger due to your kitchen window being open...banging their heads on the wall and thumping their fists on tables. Any future renovations will be due to them currently tearing the place apart themselves :D

Hi Gladys. We were using a non-stick pan so we can’t use high heat. We used medium heat for deep frying and also medium heat for stir frying. Happy cooking!

Instead of oil blanching, will it work with boiling broth/water blanching? Perhaps in batches?

Hi MM and Tuty. Yes by blanching the beef in water should work technically too. I’ve not tried it before but I used the same technique to cook stir fried fish in ginger and spring onion sauce. It turned out great. Hope this helps.

I'm so happy i came across your KZfaq account. Used to live in Singapore for 4yrs and now moved to Canada where Singapore food is hard to find.
