Yes you can put the stems in home canning, we’ve it for years. It is traditional Mexican style when using the whole jalapeños, yes I remember any of my elders putting sugar in ours either, but everyone’s taste is different.

Just finished making 16 jars ( 500 mL ) of carrots and cauliflower with a pinch of Carolina Reaper powder in it ( 4 cups of water 4 cups of vinegar 1/2 tbls of salt 1/4 tsp of powder per patch ) . And cauliflower absorbs heat real good .

the mrs here... right before moving from CA, I told the owner of my favorite taco stand how much I was going to miss her hot carrots. She gave me her handwritten recipe using "a scooping handful of..." and "2 handfuls" was as much as your 2 hands together could hold, lol. First time I made it, I did it like she had it only measuring it as I went. Trouble is, her recipe filled a 5 gal. bucket! And to think she made 3 of these every week!!! I haven't made it in years, but now I'm dying to dig it out and try to can it. I'm so excited just thinking about it! Thank you for the video and for reminding me how good these things are. Your jars are making me drool!!

Wow , they look so good. You inspired me to can hot carrots 🥕 onions 🧅 peppers 🌶 today . I only made 5 pints it’s only for my daughter and me . Thank you for the video on hot bath canning. I made some before but I just put them in the refrigerator. Now because of your help and videos I can make more jars for my pantry shelves. I’m truly Greatful . Thank You, Jeni

Thank you. This video inspired me to try this am. I noticed that your video said 1/2 headspace but the sheet said something different. It is probably due to jar size and I didn’t realize cuz I am such a newbie. I haven’t looked at your other videos but if you haven’t done so, would you do a water bath for tomatoes.

@@Ptamom garlic turns purple or electric green because it’s put in with an acid raw. It’s completely fine! Sometimes I get lucky and the color doesn’t change and sometimes it changes. 😊

I made these and LOVED the flavor but mine came out soft and almost mushy. I had ordered pickle crisp because I was afraid of them not being crispy but I didn't wait and, sure enough, they were mushy. I didn't even heat mine up before hand, I raw packed mine. What do you think happened? Do yours come out crispy without the pickle crisp?

Mine aren’t crispy but not mush either. I’m not sure why yours got mushy unless you cut them more thin than I did. Definitely use pickle crisp. 😊

Hi Jeni. Ive made your recipe and they are delicious and then I made them again yesterday and opened a jar and there really good but not as hot as the last time. My question is do they get spicier as they sit for a couple of weeks or the same. If so my maybe my jalapenoes werent as hot this time. Thx for everything you do for us.

No, it depends on how hot the jalapeños are when you start. You can always throw in a some seranos to ensure heat. 😊

Only about 10 minutes. You want your carrots a little" bendy" just to go in your jars easy.
