Roggenbier is a beer style that up until the 16th Century would have been the most popular beer style in Germany! That all ended with the Reinheitsgebot until fairly recently, 500 years later!
Find out about the history of the Roggenbier as well as how to brew your own version, and what it ends up tasting like!
Iʹm tackling the D&D Elminster's Choice in this series of brewing D&D beers. With this style I decided to try and make a Roggenbier, a heavily Rye based beer that tastes like a Dunkelweizen mixed with Rye!
What would Beers and Ales in the world of Dungeons and Dragons taste like? Iʹm putting this to the test and brewing the entirety of the D&D Ales list with my own rendition of them!

Recipe for 14L (3 Gallons) - 60 Minute Boil ~ 5.4% ABV:
* 1.7kg Rye Malt (50.8%)
* 700g Munich Malt (20.9%)
* 700g Pilsner Malt (20.9%)
* 200g Caramunich III (6%)
* 50g Carafa Special II (1.5%)
* 16g Styrian Goldings (11 IBU) @ 60
* 16g Styrian Goldings (5 IBU) @ 15
* Teaspoon of Yeast Nutrient @ 15
* Half a Protafloc @ 5
* Wyeast 3638 Bavarian Wheat Yeast
* Mash @ 40C (104F) for 15mins
* Mash @ 65C (149F) for 45mins
* Mash @ 70C (158F) for 20mins
* Boil for 60 minutes.
* Ferment @ 23C for 7 days
OG: 1.054
FG: 1.013
ABV: 5.4%
IBU: 16

Omfg, the sales pitch skit was hilarious and unexpected. The descriptions of so many of the beers having smoky elements makes sense as most beers in the real world were mostly dark and a bit smoky up until the invention of modern malting. Cheers to going out there style wise in this journey.

The slimmy thing comes from the high content of Pentosans in rye. These are water-soluble pentosan-protein complexes: these are also called mucilages, swelling substances or gums

Great looking roggenbier! Would be interesting to see a lager yeast version of this. As a fellow LOTR and Witcher nerd and a big fan of your content, I would absolutely love to see what you do with beers from those worlds!! Maybe some Elder Scrolls inspired stuff too?

Thank you! Yeah I did consider the lager yeast, but wanted to go very dunkelweizen with the cloudiness. I'm very tempted to try another one now though! Roggenbier Redux: This time it's Lager! That's 2 more for Witcher and LotR in that case haha! Elder Scrolls is a genius idea and I don't actually know why I didn't think of that! Genius, thanks!

Started brewing a year ago and though mainly invested in mead with summer coming I brewed my first beer (Belgian Golden Ale from DME) to get used to the extra steps that cider/wine don't require. Having grown up in Canada I've had ample experience with rye whisky, but never thought of rye as a grain used in beer like wheat or barley. This sounds interesting as hell and I might have to graduate from dry extract to an all grain set up so I can try this recipe!

Love it! extract is always such a good way to get into the hobby!! If you enjoy rye whisky you might enjoy this for sure! But due to the lack of hotness from the alcohol the rye stands even more at the forefront! Very interesting beer :)

I'm drinking on a dunkelweizen I brewed right now. I messed up and pitched my yeast I was going to use on my American wit. It's not bad but really missing that banana and clove thing. Also used chocolate wheat (which made since to me) to darken. Turned it black! Looks like a stout. This roggenbier recipe looks fantastic. Definitely going to try this one out!

Thanks for doing these videos. They will get my D&D keen son interested in homebrewing as he can't drink beer yet! You mentioned that sparging with ground water is unfortunate. Why do you say that? Temperature?

Thanks for watching! Glad to bridge the gap a little in hobbies :) Yeah just temperature wise, a higher temp sparge would help with viscosity and allow the sparge to extract some more sugars, although I kind of do that by squeezing the grain basket with a mash paddle!

@@NikitaVorontsov Cheers. I'm BIAB and I'm a self confessed bag squeezer! I try to do no sparge as sparging is messy with my setup but when I can't fit it all in I use cold water also to sparge as best I can. I just don't have a separate water heater. It still makes beer! 🍺
