Pliny the Elder is often touted as one of the best (if not THE best) examples of Double IPA's
I decided to brew my very own clone recipe of the Pliny the Elder Double IPA and to see how it would turn out!
Find out about the history of the India Pale Ale as well as how to brew your own version, and what it ends up tasting like!
Iʹm tackling the D&D Dragon's Breath Beer in this series of brewing D&D beers. With this style I decided to try and make a Double IPA, a harsh bitter beer that should do the beer with the name Dragon's Breath Beer justice!
What would Beers and Ales in the world of Dungeons and Dragons taste like? Iʹm putting this to the test and brewing the entirety of the D&D Ales list with my own rendition of them!

Recipe for 14L (3 Gallons) - 60 Minute Boil ~ 7.9% ABV:
* 4kg Maris Otter (87.5%)
* 230g Dextrose (5%)
* 170g Crystal Malt (130 EBC) (3.7%)
* 170g Dextrin Malt (3.7%)
* 27g Columbus (60.1 IBU) @ 60
* 9g Columbus (18.4 IBU) @ 45
* 10g Simcoe (14.8 IBU) @ 30
* Teaspoon of Yeast Nutrient @ 15
* Half a Protafloc @ 5
* 46g Simcoe @ Flameout
* 19g Centennial @ Flameout
* 19g Centennial @ Dry Hop (12 days)
* 19g Columbus @ Dry Hop (12 days)
* 19g Simcoe @ Dry Hop (12 days)
* 5g Centennial @ Dry Hop (Day 7)

As you're using a basket and essentially a BIAB system I'd recommend getting your grains double or even tripple crushed, as fine as they can get really, a stock mash basically wont happen in a basket and if it does it's easily fixed.

Nikita you have become my favorite brewing channel on KZfaq at this point. Not just the thematic beers but your overall demeanor and calming methodology. I will probably skip this one since IPAs have become the bane of my existence and I am now on a traditional German/Session crush for the last year or two. But, the color is amazing on this one and I would almost want to try it just for the SRM alone. Haha. This Saturday I am brewing your Black Grog Belgian Tafelbier. So, excited.

Thank you so much! I greatly appreciate that! :) Haha I completely understand being tired of IPA's! I'm somewhat in a similar boat! German and Sessionable beers are definitely the way forward right now in my opinion, theres so much nuance with the malt choices and flavours and the ability to actually have more than one is great. That's so exciting, let me know how your brew day turns out, would love to know what you think of the final product

The moment that you spoke the words: "only 2 liters of sparge water" I knew that your efficiency and ABV would be low. Got to sparge that sugar off of your grain. Remember, one can always boil away any excess if you have over sparged. What a pretty color you achieved!

Awesome video my man 👏🏻 It’s the next brew for us - splitting the batch in two, one a direct clone and the other a British hop version called Limey the Elder 😂 The standout points from tasting the original for me are: smoothness, balance, piney aroma/subtle bitter orange taste. We had Blind Pig too but definitely favoured Pliny. Great job!

@@NikitaVorontsov good shout. One of the reasons we love Dig Brew Co is their use of British hops formerly considered ‘too juicy’. You must visit their taproom if you haven’t already 🔥

I’ve had lots of Pliny. It’s very smooth for a DIPA. However, I think there’s a lot of hype behind that one, you should definitely try it but Russian River also make Blind Pig, which is only an IPA, but is much better IMO

It’s definitely hyped! I think that and Bells Two Hearted are the two IPAs constantly recirculating by word of mouth! I’ll look into Blind Pig, cheers

Gorgeous color, very interested to see how it develops with age. Then you'll get rid of that harsh character you're describing. I've had Pliny only once, but it wasn't a mind blowing beer, just was very impressed as drinkable and smooth it was. Cheers!

Another great vid. I brewed the Baldur's Red Ale and it turned out good, I fermented under pressure so I think I lost some of the flavour from the yeast but this looks like something I'd like to brew too. My last few experimental IPA's have been brutal, but this looks easy enough to get right!

That’s fantastic glad it turned out well! And yeah you’ll lose some yeast ester expression from fermenting under pressure unfortunately! Honestly it was absolutely easy to do! It’s a style that I think seems scary because of multiple dry hops but it’s a very nice seamless brew!

@@worems1 Quick Lagers or alternatively Just clean beers I’d say! Eg a Californian Common is technically an ale but it’s quite a clean ale so I’d ferment under pressure for that!

I've plugged in both versions of the Pliny the Elder recipe into beersmith but never actually brewed it. When I used the OG recipe with close to 100g CTZ bittering hops to do a West Coast double it was wayyy to harsh and vegetal. 60IBU for bittering sounds more reasonable. Also I really like the little History segments you've been putting in at the beginning.

Interesting! I had around 93 IBU's in this one and it wasn't super harsh. Harsh and Vegetal to me sounds like Hop Burn and that usually goes away after a couple of weeks lagering in the fridge (or so i've found!) Thanks! Glad you're enjoying the history bits :)

Good video. I'm working my way through all your recipes atm. Did you watch the CBC homebrew interview with Russian River that wa posted a couple of weeks ago? He says on there that he swapped out the Crystal for Munich a few years ago.

I did! Unfortunately it was a few weeks too late, wish i'd have done that sooner! I vastly prefer Munich and am not a great fan of Crystal malt.

I think you missed your target OG because you changed it from a 90min boil to a 60min and maybe didn't compensate for that? Not sure. Great video 👍

Think its just consistantly weaker brewhouse efficiency i'm having, I keep forgetting to update on Brewfather the actual efficiency after each brew to help the brewfather accuracy. I don't mind a lower efficiency since it just means I need to buy a bit more grain haha Thanks very much!

I've had Pliny, it's the furthest thing from harsh. I don't think it deserves the hype that it gets, unless you're just looking for a supremely drinkable DIPA with nothing extraneous.

That's very interesting, thanks! Surprising for the 93 IBU's as well! To be fair i'd say it was bloody good, but I see what you mean, it wasn't like my mouth had fireworks and needed the birds and the bees talk all of a sudden.

@@NikitaVorontsov I've had West Coast DIPAs that were flavor bombs with just enough perceived bitterness to balance everything while supposedly being in the same IBU range. Stone Citracado (honeydew and actual honey) and Bottle Logic Double Actuator (tropical fruit bomb, with mango and pineapple at the forefront) are my two favorites. Don't get me wrong, I'd never turn down a Pliny, but here in Texas we can get Yellow Rose and that is just as good.

@@Fyrwulf stone citracado sounds incredible! Sadly most of the breweries around that I’ve seen mainly just do variations of NEIPAs which I’m starting to get a bit tired of! Would love microbreweries that push the boat out a little

@@NikitaVorontsov Unfortunately it was their 20th Anniversary beer, so it only had a limited run. But it's in my Top 20 list for best beers I've ever had. I love NEIPAs, but I'm also picky and not a fan of brewers using Pilsner malt in them.
