I still think if you use mince meat - especially for a raw dish - you definitely should go to a butcher shop and not the grocery store. Its not very scary when you stop for a moment and think about it as a normal spread for your bread. you cant compare mett brötchen with something like Balut (embryo egg) and maggot cheese from italy. its very unoffensive and has a very "fatty meaty" flavor to it untop of the unions and the freshly baked bredroll.

Yes, I've enjoyed the reactions of my international students in Boston to our regional foods. Sometimes the reaction to a description is negativity that can influence perception and taste. Some of my international students, including some Europeans, found the description and picture of clam chowder [a New England specialty] very off putting. The idea of clams, cream and onions as a soup was too strange, but most of them liked it after trying it. It's a Yankee New England cultural staple, local communities have variations on the theme and restaurants compete in the annual Boston Chowderfest with their signature versions. Other regions have competitions for Barbecue, and the like. But in cosmopolitan cities like Boston, ethnic neighborhoods also have informal competitions, like the Boston North End pastry shops competing for best Cannoli.

Having grown up in Germany with a German mother and English father, Mett was a staple part of my diet. Living in the UK, I returned to Germany on Holiday with my wife, who had never tried it. She looked at me very weird and disgusted the first time I ordered it for breakfast. I was immediately transported back to my youth and realised I had missed it. I managed to persuade her to try some and that was it. She was hooked. Once she had got over the initial shock of what it was, she focused on the taste and then, every day, she wanted Mettbrötchen for breakfast. Now, whenever we return to Germany on holiday, the first thing on hers (and my) list when we arrive, is a Mettbrötchen. I have to say, that you need to put more mett on your roll and the onion needs to be chopped finer and not so much, with a pinch of salt. My German grandmother, even used to mix hers with a raw egg and put the chopped in onion in and mix it all together, before spreading it on the brötchen. But there again, she was from Berlin and things are always slightly different there.

The Mett you purchased at the supermarket is literally JUST raw pork without spices. And as you forgot to season it yourself with e.g. salt, pepper, garlic, powdered paprica etc., it's clear that all you'll taste is onion😂 The Mett you can get at the local butcher's is mostly seasoned quite well and you can choose between "mit Knoblauch" (with garlic) and "mit Kümmel" (with caraway seeds). Now I'm craving a Mettbrötchen, but can't have one as I'm pregnant and any raw meat or fish is a no- go 😫

Watching your video when my 4 year old actually just ate a Mettbrötchen for breakfast... Actually, when our children were born, the pediatrician gave us a schedule when the child can eat which food. At 4 months some steamed carrots, at 6 months cooked fish and so on. And the last item on the list was, I'm not making that up, Mettbrötchen (raw pork!) at 1 year old.

Ah, the quintessetial rite nof passage for every American youtubers in Germany: Mettbrötchen! You and Kelly from Kelly does her thing are the only ones that didn't go crazy for them after trying. Which is - needless to say - perfectly fine. Maybe a few tips for a potential second try: I often eat Mettbrötchen from KAufland but have to say, their Mett isn't the greatest. It is okay, but not great. Second: you made the, in my opion, typical mistke for a newbie at Mettbrötchen "I'll just try a little" A thin layer of Mett doesn't get you the right meat - to - bun ratio. It is quite boring. There has to be a thick layer of Mett on it. Go big or go home. Third: there is a discussion whether or not to put butter on the Bun before spreading the Mett. Personally I like both, but prefer it with butter. So the heated discussion on whether a Mettbrötchen needs butt I would answer: it doesn't need butter, but everything is better with butter! Fourth and last: Mett is preseasoned with salt and peppter. But lightly seasoned. Depending on the Mett (and the one from my Kaufland ist extremely lightly seasoned) and your personal taste, you might want to season it with salt and (white) pepper to your taste. Bonus tip: avoid all the crazy other suggestions like putting mustard or Worchestersauce or pickles or.... on it!

My first exposure to Mett was watching "Babylon Berlin" where in the third season a character orders it. I couldn't hear what she called it, but I was shocked when the subtitles said "pork tartare". Searching on that name yielded nothing, but a few weeks later I stumbled upon a KZfaq video about it. That's one of those things that I'm sure I'll never try, though in large part because of the raw onions.

Actually you should not eat this unless you are in an country with a high level of food controll because you can get Trichinella from raw pig meat. But in Germany there is something called Fleischbeschau where experts check the meat for parasites. So in Germany you can enjoy it no concern.

@Henning Halfpap But for a proper Labskaus or Grünkohl mit Pinkel (which is only available in the North-West of Germany), you have to be in those regions. And Labskaus differs from Hamburg (Matjes and beed root are included), in Bremen they put the fish and beed root on extra plates 😉

First of all: I am from Saxony, so this just reflects my local preferences. - You have to spread butter underneath the minced meat. - The meat has to be "halb und halb", which means that 50% percent has to be from pork and 50% from beef. - You have to massage in salt and paper into the meat before spreading it on the buttered "Brötchen". You can also buy this pre-spiced from a butcher. Honestly speaking, I would always choose the meat from a local butcher over the supermarket stuff. - If you prefer to, add some celery salt. - A variety is to also massage in a complete egg. - You added too many sliced onion pieces.

one thing that might ease your mind when eating this is that mince declared as Mett has even stricter regulations than minced meat, which is recommended to cook. so it is fine to eat it raw unlike other pork meat.

I highly recommend to find first a good Bakery for the Brötchen and then a good butcher for the Mett. You should add butter and salt/pepper. Some butcheries may have pre-spiced Mett which is often called Thüringer Mett, maybe try one of those. Important is also the right amount of butter, Mett and onions. If you manage to come to Cologne you can order them ready-made in restaurants as snack.

The fear of raw pork comes from the cases of trichinosis it used to cause. At least in Austria, infected pork was last detected in 1970 and the situation in Germany is probably similar. The rare cases of illness that have since been detected in Austria (approx. 1-3 per year) were caused by the consumption of products from abroad.

Maybe, but pork is just more receptive to ill makers than beef. Hygiene regulation is much more strict for Mett than it is for Tartare because of that. Americans fear steak tartare too, they are not scared of the processed foood that is damaging their health, they are scared of the least processed foods.

I think we had some cases in germany from poorly cooked wild boar, but I may be wrong. But yes, trichinosis is the issue with raw pork. If it is left in the open for too long, there may also be salmonella growing on it, like on dessert creme. So, trust your butcher, and eat it soon, and you´re fine.

You can put a slice of cheese on top of the finished bread roll and bake it briefly. (In the oven, please, not in the microwave, because in it the roll would become soggy). Then the Mett is no longer raw and you can overcome your reluctance perhaps better. (This is the version for beginners). When you've acquired a taste for it - and you will, because Mettbrötchen are saucy - buy the buns at a real bakery instead of those weird pastries from the supermarket, get ground pork from a „Strohschwein“ or straight from the Bioladen, get shallots instead of that capital vegetable onion you had there, and season your (raw!) Mettbrötchen with a little freshly ground black pepper. In general, all food tastes better when you don't choose the cheap-and-simple supermarket versions as ingredients, but the handcrafted quality products you can find everywhere in Germany.

i am actually surprised that the mett brötchen is considered the weirdest as we also consume a variety of intestines, pigs feet (haxse) and cow's tongue (which is actually delicious if done right) to name but a few. it probably derives from times when every part of the animal was supposed to be used which i think is the right way! maybe you should have started with tartar 🙂.
