One of my favorite foods. I use Icy Brand with boneless salmon. My parents made them with crushed saltine crackers, onions and seasoning rolled in cornmeal and flour and dropped on piping hot grease. Served with sliced cucumbers and tomatoes fresh from backyard. ❤️ Your voice is melodic and soothing.

But every once in awhile he would bring salmon cakes up again in conversation. So, I thought I would give it a try myself. Because I have never made them before I was looking for someone to guide me through it. Not only did you go step by step, you explained everything. I remember mom making these and me making them for my children. I made up a way I made them and the kids loved it. I would fix my salmon with whatever recipe you like and flatten the entire amount in the bottom of my skillet. Cook one side and then the other. Almost looks like a pan of cornbread. Then when it’s good and brown on each side, I would then chop it up in that same skillet and add about 4 servings of cooked rice. Mix together and add peas on the plate for a great dinner. It’s wonderful. Thanks for the sweet memories. 💖

Salmon croquettes were a part of the menu growing. We didn't call them patties. I had an aunt that cooked them sometime with the potatoes. But grandma did the croquettes creamed peas, and mashed potatoes. I do peppers and onions, and never precooked them, and they get done. Looks good and yummy.

Hi Gina. My FAVORITE dinner memory is: salmon croquettes, rice, biscuits and Alagae cane syrup!!!! I put onions and peppers like you do and I grate a little lemon rind in them too. Also, I mash the bones right in the mixture. lol. I love salmon burgers on a soft bun with butter lettuce, tomato and tarter sauce. GOOD EATIN, YOU HEAR ME?! Thanks for the memory.

@@kylasbibi That red salmon at the dollar store is fresh outta Radiation Okinawa. My Dad always said: "You get what you pay for." I just wait until it goes on sale at a large grocery store (Shoprite in my area or Acme ...Kings etc) and stock up. If there are limits of 4 cans etc. I just go back thru the line or come back another day before the sale is over. I also just dump the juice and keep the rest. She's tossing a lot. Must be nice.
