Hey friends, If you love Mexican food as much as we do, I have found some recipes that you have to try. This taco casserole is sure to become a quick and easy weeknight favorite, it hits all the classic taco flavor notes we all crave. And I made chicken chimichangas at home for the first time and I could not believe how crisp they were and NO frying was needed! AND I came across a copycat recipe for Cheesecake Factory Tex Mex Eggs and WOW we loved them, too! And they were much easier than I ever imagined. I’m scared to try making homemade potstickers 🥟 we love all kinds of food around here but I don’t have the patience to pinch them together. I just make my family suffer with the frozen ones or when we order out. Also burritos. I’m not good at rolling them up. I’m either a chicken, a perfectionist or just lazy about it lol but my kids are grown and adventurous cooks so I don’t have to look too closely at myself for those recipes lol You made everything look so good! Croissants! Really any kind of yeast bread. I'm a decent baker but I've never had a lot of luck with yeast breads...also eclairs or anything with a patachou dough

Hi Mel, I wanted to share a few tips for your next Tex Mex night, try using Velvetta cheese and some rotel and pour that over the casserole, some black olives and jalapeños. Talk about taking it to the next level!! For your Chimi’s try warming your flour tortillas prior to rolling them. That helps with the flexibility and makes the wrapping much easier. We eat Hispanic food pretty much every week since we are Hispanic and live in New Mexico! If you ever get a chance try Hatch green chili, like the real stuff not the Walmart canned stuff they call Hatch, it will truly blow your mind and taste buds!!! I loved the video and thanks for sharing the recipes!!

That sounds amazing, I do love velveta and I'm sure my husband would love jalapenos on this too. I was concentrating so intensely on this recipe lol I did not even think to warm those tortillas. Between the sauce, oiling and preheating the pan, the filling, and just trying not to mess it up. I almost forgot my sides😂 I didn't even have time for the quick 7 minute rice! I've heard of hatch chili's but I have never eaten any, are they super hot? Also that Mexican white sauce, is that just like a cream type sauce? And also do you think that fillling should have been that wet?, It ended up tasting and cooking up just fine but I was worried about it. Thank you so much for these tips and for watching, now I can pick your brain brain since I know that you know Hispanic food.🥰😉

I love this, I used to always do taco Tuesday, but I've branched out to making Mexican every Tuesday. Not just tacos, because we were getting bored with that. These are great ideas.

hubby and i love mexican!!! so these recipes are right up our alley!!! ive used the egg rolls too , only i mix up hamburg/onion/garlic /mushrooms/ cheese and then when meat mix is cool i will put some down and then take a cheese stick cut it in half and lay that on top of meat n roll it up , hubby loves those , i will def have to try the chicken one, so thank you Mel for a great video and keeping me drooling!!!! have a wonderful day Mel!!

Mmmm. Mexican food. *drools like Homer Simpson* I love a good chicken chimichanga! I usually shallow-fry mine, then put them in the oven to melt the cheese on top. Delicious! These looked so good! (So did everything else!) Thanks for sharing!

The chimichangas were really not hard at all, just a lot moving parts and steps LOL And I was so surprised with how crispy them and the egg roll wrappers baked up, I can't wait to do some more! And yeah, rice is definitely a texture issue with me, all the different varieties smell good but I just never like it when I try it LOL. I love Mexican food! Wow, you did a great job on these recipes. Chimichangas are one of my favorites from the restaurant here near my house. I promise you we eat there 3 times a week. Lol. Truly enjoyed this.

I'm definitely going to try that taco casserole, that looked so good!! I've not had chimichango's in years! I combine recipes a lot, I pick my favorite things about each one especially if it's easy 🤣I've been trying to step out of my comfort zone and try new things 💜 Everything looks delicious friend 💕

There’s a restaurant near us that has Philly Cheesesteak egg rolls that are to die for! I’ve made them before using Steakums and Mozzarella cheese. You just have to make sure to get all the grease out of the Steakums. I fried them but I’m going to try them in the oven now that you’ve shown us how. Try these if you like steak and cheese subs!

Thanks!! All looks so good!! Try this Mel , it’s 2 cups of shredded Mexican blend cheese or any shredded white cheese, and 3/4 cup of half and half, 1/4 c water, microwave 1 minute intervals til creamy

That white sauce is exactly what would be on my sour cream chicken enchiladas. Being from New Mexico, we use green chiles instead of tomatillo/jalapeno for green sauce. Try doing your crockpot chicken, then layer this sauce, corn tortillas, chicken, white sauce, and cheese. Then bake until bubbly and melted.

Yes we make a sour cream orca white sauce enchilada it's so good similar to your chimacanga. We also do just refried beans nachos with all the toppings. They all looked delicious. I want to try shrimp scampi like red lobster.

MamaMel, I discovered you last month and am hooked!! i was tickled and surprised that you didn't know what a bechamel/white sauce was and that you expected to have cheese in it :D I grew up in the midwest and had to eat chipped beef w/ cream sauce all the time. Sometimes, when I make baked ziti, I'll make the bechamel sauce w/ a small carton of ricotta cheese and garlic mixed in. I pour this over the top of the finished ziti and top w/ shredded cheese. It is delicious. I really enjoy watching you. I grab a glass of wine, though--no sweet tea here :D

These all looked really good Mel. I love Pico or at least tomatoes on about everything. Our local Mexican restaurant makes a crazy fat overstuffed burrito here and puts I think it's probably the Mexican cream sauce on top of it it is good but.. like you I think it needs something I'm not sure what just something. I think I like the cheese sauces and the tomato sauces better. The chimichangas and the egg rolls look like they would be winners I do like crispy. Take care and thanks

YES EXACTLY, it's hard to put your finger on what it is with them at the restaurant LOL But I think you and I are onto something here - it does just need something a little more fresh and light on the top for sure. thanks so much, I do try to keep it simple as possible. Hence the spray oil, it worked just as good as the butter and oil brushing on, heating, more brushing process LOL And girl I love Cheesecake Factory!
