iPad screen turns off in guided access - fix - howto - disable screen sleep

If you have an iPad that is suddenly going dark in Kiosk (Guided Access) this is how to resolve the issue.
Enabling the "Mirror Display Auto-Lock" setting under: general - accessibility - guided access will resolve the issue.
Prevent ipad from going to sleep.
Guided access sleep.
Display going to sleep.

My problem is that it goes to sleep when I am viewing a recipe when cooking and I am constantly having to punch my passcode in time and time again. Usually after 60 seconds or so. Don’t mind it saving the battery but would like it to stay on longer before it goes off.
