Thats what I wanted to find out!! I kept seeing these cauliflower meat replacement recipes and I knew I had to try it out! WOW was I suprised... but you know me... I didn't want this vegan meat to stay the same, I always have to tweak and tune it a bit! So here it is, my new version of cauliflower and walnut meat into a taco!!

I used to be vegan but I’m IBS and let me tell you, the vegan trends are not getting more IBS friendly. It’s the total opposite and I can hardly find a protein powder because pea protein powder is all the rage and will put me in the hospital with unbearable painful reaction.

Omg I literally just made taco meat from cauliflower, mushroom, and walnut. Added garlic, tomato sauce, homemade taco seasoning. It was SO MUCH BETTER THAN BEYOND OR ANY STORE FAKE MEATS!!!! absolutely incredible!!

I just made this. The walnuts wouldn't soften up. I cook them for a half hour. I think I'll soak them overnight next time. Besides the nuts being too hard, it tasted AMAZING! I added a chipotle pepper and dehydrated onion instead of the powder. Thank you!

This- was so DELICIOUS! I made it last night- I’m Mexican so it tastes similar to al-pastor- my teenage boys gave it 10! I didn’t add any soy because my son has eczema. Staple in my meals now!

Mushroom seasoning goes so fast in our household! My mom is vegetarian and I’ve found it to be super helpful. There are also a lot of yummy Vietnamese vegan seasonings under the brand Quoc Viet. Look for the vegetarian versions and they’re usually vegan. Vietnamese word for vegetarian is Chay

@@tomchrisfield7348 you can! But the mushroom seasoning is a kitchen staple in my opinion. Lasts longer than mushrooms in the fridge and a quick flavor boost! Whenever I cook with a bunch of mushrooms, for example in a soup, I love to add a bit of mushroom seasoning to further enhance the flavors

tacos, gyros... at the end of the day, they're all just sam'miches...this looks like it could also be a really good vegan substitute for chorizo (mexican style) though you may need to add something like coconut oil for the mouthfeel. I'm glad you credit, as best you can, your sources, but also i'm glad you don't just cut / paste them... it's good to see creators that say "I got this idea from so and so, but i'm going to do my own take on it"

So I made this for my meat eating hubby and he liked it. He said it needed a little more moisture. I’ll make it again and tweak it like I normally do with new recipes. Thank you for all your recipes and the good information on how food/ingredients work together.

One thing he didn’t add that the vast majority of recipes for this meat sub include is soy sauce (tamari and liquid aminos are often seen as subs, which makes sense). I’m not sure if that’ll solve the moisture problem, but if nothing else it’ll add a little more depth of flavor.

I found one of these recipes awhile back, and (inspired by you!) tweaked it by adding coconut oil, ground dried shitakes, and some vital wheat gluten + methylcellulose to bind it all together and give it a bit more meatiness/chew. Cool to see you making a video on it. Fooled my friends, who thought it was real ground beef.

I add garbanzo bean flour instead of the starch and worchestire sauce and a dash of liquid smoke !! Sooo good!!

I made this with frozen cauliflower rice, pecans and 8 oz of minced mushrooms, and oven roasted it. Amazing! It’s a weekly staple of my Sunday meal prep now. Thanks!

Since seeing that poll, I was really curious about the result of this experiment of yours ;D I don't miss the meat much and substitutes like beyond meat are just not my fave. Hence, these veg-based ideas of yours always spark my interest - with your expertise and experience you are able to elevate such humble ingredients to a completely new level creating some incredible dishes! And I must say, this one seems to be one of them! It seems the switches you made (even though they very really tiny!) made this concept even more satisfying! Pronounced the second way that you said , gyro, it’s lambs meat on a pita bread with onions tomatoes and Tzatziki sauce which is so delicious, it’s a cucumber and I think like yogurt sauce, i’m sure they can be dressed many different ways but this was how it was made at the place I used to work at, 🙂🥙

Also, yes I'd consider a Gyro a kind of taco, or at least both of them are a kind of sandwich. Sandwich= filling between two layers of bread or bread substitute like a tortilla.

We found a new type of cauliflower, Mark. It is known as Taiwanese cauliflower. You'll find it in the Asian markets. It has a firmer, more flavorable flesh. It likes to be battered and fried. It is really good!

Hey! Got the mushroom seasoning! It's really amazing and helped me with an alternative to my ham seasoning I use! I want to start incorporating more vegetarian/ vegan meals in my diet. Just need to start with something easy. Need some broke adult vegan meals lol.

I always add oil to my "taco meat". I'm not one to use oil a lot but it made a difference to me with the "taco meat" no matter what veg I used with mushrooms and walnuts. I love that you used lime juice. I don't know why I didn't think of lime! Crazy! I love limes, dah.

Cute food processor! ☺ I have a Cuisinart food procesor that I bought back in 1975. The thing is a tank. It is still going strong 47 years later. Sadly the plastic bowl cracked but I found a used one at an auction and got a whole new procesor for $1, even though all I wanted was the bowl. I never regret spending money on quality equipment.

There's not a humble brag here, as much as it sounds like one. But decades ago when it was only the Yves ground meat out there, cauliflower and walnuts was the exact thing we used to cut our mix down by half to last longer. SO gooood. Kudos on making the extra step to making the full recipe.

I think on the next round though I would steam the cauliflower first to help soften it a bit and soak the walnuts. The finished product had a little too much crunch and not that mushy Sloppy Joe texture. But the flavor was right on.

I hav a cauliflower from the market and walnuts i diddnt hav a idea for and hav been thinking about sloppy joes so im deffinetly trying this base. Im just adding peppers, onions and tomato sauce,tahmari but i feel this would be great the way you made it Thanks stash i cant wait for the book.

2:04 Excellent observation. Toasting the walnuts in a pan with spices beforehand would definitely bring out the oils in the nuts, thus more flavor.....

I worked at a vegan place and we made our tacos like this but we also added mushrooms that were crumbled up and added evoo and tamari and baked it

I use quinoa and lentils for tacos. It works well, but it's a tad mushy. Might try adding walnuts next time.

Chipotle Tobasco is amazing! I would assume the oil would come out of the walnuts, but... I'm with you on thinking a touch of olive oil might help. I always start my tacos with frozen mirepoix, sauteed in a Tbsp of olive oil, then add minced garlic. One small suggestion for this size of recipe: try adding one or two teaspoons of cocoa powder. Aside from it technically being a kind of seed flour, acting as a bit of a thickener and binder, as I'm sure you've heard, it is also traditional in Mexican cooking, as it's found in molé. I always add it to chili, and it pushes it into amazing territory. Let me know if you ever have done that, or if you haven't and end up liking it. P.S. Only because you asked: Gyro, as it is Greek, is pronounced "hero," which is where the correctly pronounced but misspelled "hero sandwich" gets its name. For that, they use gyro meat, so it's goat or sheep, but instead of in a wrap, which is traditional, people started using buns, because that's what they found in East Coast bakeries, and they started topping it with all kinds of non-traditional "fixins," including Cole slaw, making it an American fusion food. I'll have one, minus the goat/sheep, because eeeww. I tried a traditional one back in 1987 or so, while I was transitioning to lacto-ovo vegetarian, and... it tasted like a barnyard. To use a pseudo-Dutch, SW Michigan adjective, it was "disgustra." I'd much rather pet them than eat them. I made vegetarian burritos once ( from a cookbook I no longer have) . It had walnuts in it, and I don't remember what else. It was absolutely delicious!

a lot of bolognaise recipes call for walnuts, but i like an excess of vegan parmesan (pretty much the same as you did it) and found that when i added blitzed cashews it really helped bind it all together better than walnuts. gonna try this ground beef replacement myself, but will sub the walnuts for cashews probably... might omit the cashew cheeze to avoid a cashew overload!

The man has kind eyes. He and the lady look peaceful and happy. This is what not eating animal meat can do to us: loving kindness, joy, good health. I hope that people who are on keto diet, who eat meat and cheese and eggs too much, convert to being vegetarians, seing how hyper they are and seing how peaceful and kind this couple are.
