Making Burgers from Cauliflower and Walnuts is a REALLY GOOD Idea!
After making the cauliflower and walnut tacos I wanted to experiment and expand this recipe more! Vegan Cauliflower burgers are going to be a major hit at your next BBQ and with any meat eater. I was actually shocked with how insanely good these vegan burgers came out!
They had the bite, chew, and a great taste of an awesome burger!

Transcribed.... 2 cups cauliflower 1 cup walnuts Seasonings: 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1 Tbsp cocoa powder 1 tsp mushroom seasoning Nutritional yeast 1 tsp black strap molasses 1 Tbsp corn starch 2 Tbsp methylcellulose 1/4 cup water 2 tsp olive oil Beyond stoked! Heat the oven to 375F / 190C and bake for 30min. Turn the burgers half way through

Id recommend boiling the walnuts in a vegan beef broth for 5-10 minutes. It removed the nut crunch but keeps the bite that really adds to the texture.

@@mr.stealyourgirl5003 Hence the vegan beef broth, which is a thing. Might be hard to find depending on where you live, but it's just broth that tastes like beef broth without having any animal products involved.

@@mr.stealyourgirl5003 vegan beef broth. It’s usually a bouillon of spices and flavors that mimic a beefy taste. They make chicken ones too. He uses them often.

Walnuts really have something in a meat substitute. We sometimes make a delicious mushroom pate including walnuts. The flavour they add is really good.

Maybe this is just me, I’d probably prefer putting actual chopped mushrooms in there for not just the taste but for the texture as well. That’s just me though. Looks great! Can’t wait to give this a try!

Why are people here giving Mark a hard time about meat and his own food choices? The man is embracing diversity and options. I love meat and I acknowledge that some people choose not to eat it to avoid harming animals or the environment. It couldn't hurt meat eaters to switch it up, reduce the amount of meat they eat without giving up meat altogether. Mark I love what you do, and if you help others consider their options in a tasty way more power to you. Keep up the good work!

I am not a vegan or vegetarian, but these can still have be cheaper version of grass fed beef or do half and half, lots of packaged vegan products are worse than meat, so many additives

I bet I'd like that one a lot! My friend is a chef he told me to add inexpensive really grapey wine to the beef stew recipe he'd given me, not much only like 1/8th cup or less. I was skeptical because I didn't want my stew to taste winey or grapey but it really didn't at all and that little bit of sweet grapey wine did an amazing job of amping up the beefy flavor of the stew. I wonder if just a bit could of grapey wine (combined with all the other seasonings) could amp up the flavor of non meat burgers. When my back gets better I'm going to try it!

Jack Monroe suggested adding strong black tea as an alcohol-free alternative. I've yet to see if it works in a vegan recipe though.

@@oliviabigley3378, maybe pecans would work too. They look a bit like walnuts and have a bit of the same consistency as opposed to almonds that are harder/crunchy.

I love your videos and watch them regularly. I very much enjoyed your impossible meat hotdogs, but if you are open to suggestions, I would also love to see how you would create a hotdog without using Impossible or Beyond. Made my own ones. I just used Califlower, Walnuts, spices, Winchester sauce, some rice flower and they turned out to be great. I feel like all of these processed staff that you add is not needed. Thanks for the great recipe!

I am not vegan, but I've been wanting to make something for my mom who is vegetarian and I tested it out for myself and it didn't turn out half bad! Not being vegan, I didn't have some of the specialty binding stuff on hand, but used some soy sauce and Worcestershire sauce and they turned out great. Did mine in my charcoal grill. Reminded me of a well done crispy smashburger. My wife who is a beef burger fanatic like me approved too!

Don't use cellulose. Use ground up pumpkin seeds with a half teaspoon of dry mustard. Cheaper, easier, and you can take advantage of an opportunity to get magnesium. The mustard powder will bind everything up. Picked onions are a good idea to put on this.

Thank you very much for the substitution idea! I have Crohn's disease and can't have carboxymethylcellulose. I don't know enough chemistry to know if that would be created if I used methylcellulose in recipes, but I don't want to risk it. I'll have to try the mustard powder and pumpkin seeds

I love these so much! Especially since we can control the seasoning & also keep the ingredients pretty unprocessed! I love Beyond, but having a great alternative that is way less junkfoody really makes me happy.

Stache master!! Do a series with mushroom mycelium, its thhis awesom stuff that mushrooms grow, it has meat like fibers. So much potential. Edit, guys vote this, i really want the stache master, to see this. I think he would love it.

It’s something I’ve been working on for a while! It’s hard to grow mycelium into an edible form without a substrate! I’ve been working on a beanless tempeh but it hasn’t worked out that great

I absolutely love this new mini-series with ideas based primarily on whole foods - nothing wrong with seitan, pea protein ot tvp BUT it is nice to show people that even with mostly plants you can get a very delicious, super satisfying vegan burger! And after your (and Monica's) taste test at the end, I am sure they must have been bomb! . Thank you for sharing another fantastic idea with us! Lots of love and have a great rest of the week!

Hi Sauce Stache!! I was wondering if soaking the walnuts will make a difference? I've seen some people soak them overnight before mixing with cauliflower but not sure if its necessary

Not to mention, how much cheaper it is to make these compared to meat. And so much healthier for you. Whenever your eating meat you have no idea if that animal was sick or had some disease.

@@Stubbari possibly. it depends what disease they had. But do you want to take that chance? How many people eat steak medium rare or undercook the meat? You should never eat an animal that appears sick.

@@Plantbased7 Yeah, obviously you shouldn't eat an animal which appears to sick. Just like you shouldn't cross the road when the light is red. But do you get ran over every time you do that? Probably not. But to ensure your meat is "safe" cook it at least to medium.

YES!!! ugh Im so mad I cut that part out of the video... so YES these freeze really well. The great thing about methycellulse as a binder is its firms better the second time around. So after you cook them in the oven you can freeze them, then heat them up the second time in a pan or on the grill. You will end up with an even better burger the second time around!

I've made a few patees in the past (not on the show) its always fun and I think marmite and soy sauce would be a perfect flavor combo for them!

@@SauceStache My personal favour is a mushroom paté with red wine that has been brought to the boil together with a bayleaf,, herbs and just a teaspoon of Marmite Edit; I forgot I add onions too

so - could you partially cook the cauliflower, soak the walnuts and fry instead of bake? Also - methyl cellulose is *Expensive* - are there alternatives? It's like $60 on Amazon for the smallest bag (in Canada).

There is food grade methylcellulose powder laxative in bulk and Way cheaper than Modernist kitchen. I just don't know how much you would have to use because it isn't marked as high viscosity like the MK brand is

You should use every technique to make a burger that you’ve developed so far to create an ultimate burger. A mushroom cauliflower tvp walnut Asian fake canned meat etc burger!
