Jacques Pepin and Martin Yan, friends and legendary public television chefs, meet up in Hong Kong for a friendly cooking challenge. The two chefs buy the same ingredients at the open air market, but each uses them to prepare a flavorful dish in their own unique style.

Also in this episode, Martin makes a Chinese-influenced ravioli stuffed with pork and roasted eggplant and a stir fry with prawns and melon.

About Yan Can Cook:
After receiving his formal restaurant training in Hong Kong, Chef Martin Yan immigrated to Calgary, Canada where he was asked to appear in a daytime news program to demonstrate Chinese cooking. The rest, as they say, is television history. In 1978, he launched the groundbreaking Chinese cooking series 'Yan Can Cook' on public television. Infused with Martin's signature humor and energy, Yan Can Cook has gone on to become a global phenomenon and has won multiple James Beard Awards.

Both of these gentleman know a ton about food, share it with style, and are great guys. Jacques has always had an appreciation for cuisine that is foreign to him.

I make myself laugh every time I go to the quality settings to turn the 480p definition to 1080p… and then remember this was just filmed decades ago and there’s nothing I can do about it 😂

Unfortunately for Jacques and his family, he lost his wife a few months ago. Probably still in mourning.

24:02. Come on KQED... The next video suggestion box is 100% covering Yan's face for the conclusion and his toast with Jaques. What a let down 👎. I believe it was a French friend who always said: " always look people in the eye, when having a toast".

Fusion is generally a fool’s errand. We don’t need to haphazardly combine meticulously cultured cuisines for novelty’s sake. For example Xiao Ling Bao is much more elegant and proven version of this Chinese ravioli nonsense Yan is making. We are being brainwashed by the corporations into thinking our cultures we’re not ultra sophisticated, that the past is for luddites. Looking to the origin of our traditional recipes is much more revealing and rewarding than stumbling drunkenly into a homogenized future! That said, both men are extremely talented though they do what they’re told to for money.

I used to have that same attitude until I realized that many traditional dishes were at some point novel in history. If people in the past all adapted this attitude of condemning dishes for not being traditional enough, a lot of famous traditional dishes, including Xiao Long Bao, wouldn't be around today. While I prefer traditional version of dishes, there's nothing wrong with fusion or any other change. If people like it, they like it. If people don't like it, the variation will disappear into history.

@@dtshakuras I don’t condemn fusion. Only the stuff that isn’t thought through. If we look at today’s fusion most is incoherent. It’s children drawing outside the lines.
