For the Sauce
3 Tbsp toasted white sesame seeds
1 Tbsp soy sauce
1 Tbsp sugar
For the Spinach
1 tsp Diamond Crystal kosher salt (for blanching)
1 bunch spinach (8 oz, 227 g)

0:22 Bring water to a boil and toast sesame seeds.
0:45 Grind the sesame seeds.
0:54 Season the sesame seeds.
1:06 Blanch the spinach.
1:23 Transfer the spinach to iced water and squeeze the water out.
1:50 Cut the spinach.
1:57 Coat the spinach with the sesame sauce.
2:10 Serve.
