I love the way you treat the spinach! It's not my favorite, but I would bet I'd like this. Hadn't tried this yet, but I will try it with Swiss chard. My neighbor keeps giving me beautiful bunches of it. Beautiful presentation with the roots as a garnish!

Swisschard is fantastic as goma-ae. We used to grow it at my parents house and it was a common side dish in our household growing up. Goma-ae also works with other veggies, like green beans, kale, etc.

You're welcome Erin! The sesame seasoning works for non-standard veggies like fresh tomatoes and carrots and I think it could also work with proteins. I hope you have a great week too!

@@NoRecipes Thank you, Marc. I never imagined it on carrots...that would be delicious. Have you ever tried it on asparagus or sugar snap peas? Thanks for sharing your knowledge so freely. I've learned so much through your videos and responses!
@NoRecipes
@NoRecipes 3 жыл бұрын
It's fantastic with asparagus. As for snap peas, the flavors work well, but snap peas have a very slick surface and the sesame doesn't stick very well to it. One way to get around this is to add a little liquid to the sesame mixture(like dashi or water) to make it less crumbly which will help it adhere to the surface of the pods.

@@NoRecipes This is so helpful - thank you. When I made spinach goma ae at home previously, I remember using a little dashi as part of the recipe. I think I need to try it with sugar snap peas! I just love them. Thanks again for everything, Marc!

Thanks Bhawna, and welcome to the channel! Hopefully you can find a Japanese or easy Asian grocery store that carries some of these ingredients. Most of my audience is based in the US, so I try and make my recipes using ingredients that are available there, but unfortunately they may not all be available in India. I generally include suggestions for substitutions where possible in the headnotes of the full written recipe on my website (link is in the description). I'm also here to answer any questions you may have😀

Can I use it with bokchoy? If yes, how long should I cook the bokchoy and do I make more of the sesame seed mixture?
@NoRecipes
@NoRecipes 3 жыл бұрын
Hi Mara, this works with many vegetables, including bok choy, Swiss chard, broccoli, cauliflower, green beans, carrots, etc. In terms of the ratio of the sesame seed mixture to vegetable it's going to depend on the vegetable you use. Spinach is not very dense, so you could probably get away with using this amount of seasoning for a lot more bok choy (maybe 300 grams or so), but there's a fair amount of flexibility here, so maybe make a little extra and then adjust it to taste. You can keep the sesame mixture in the fridge for a few days. As for the cooking time for bok choy it depends on how thick the leaves are and how crisp you like it. I like my bok choy very crispy so I usually only cook it for about a minute (same as spinach).
