Fugu (河豚 or 鰒; フグ) is the Japanese word for pufferfish and the dish prepared from it, normally species of genus Takifugu, Lagocephalus, or Sphoeroides, or porcupinefish of the genus Diodon. Fugu can be lethally poisonous due to its tetrodotoxin; therefore, it must be carefully prepared to remove toxic parts and to avoid contaminating the meat.
The restaurant preparation of fugu is strictly controlled by law in Japan and several other countries, and only chefs who have qualified after three or more years of rigorous training are allowed to prepare the fish. Domestic preparation occasionally leads to accidental death.
Fugu is served as sashimi and chirinabe. Some consider the liver to be the tastiest part, but it is also the most poisonous, and serving this organ in restaurants was banned in Japan in 1984. Fugu has become one of the most celebrated and notorious dishes in Japanese cuisine.

I'm Japanese, but I have never had puffer fish cuisine. puffer fish is a luxury food. It is a fish that only a chef with such technical skills can prepare, so it is understandable that the price is high.

Full course is around ¥10000 I remember, expensive but worth it. Veeeery delicious, no matter it's sashimi, fried, or in the soup.

As a chef currently shadowing my mentor to become certified to prepare torafugu it takes not only ridiculous knife skills, but also muscle memory to safely prepare the stuff. One wrong nick and you could potentially endanger someone's life, but when done properly and safely its one of the finest sashimi fish you can eat. Just don't eat too much, it has a tendency to make your face go numb

Does it taste good? I'm american and have always thrown up whenever I eat white fish, raw fish, or sushi, but I'd definitely try fugu if I ever went to Japan!

@@Sam-gx2ti Basically, cheap sushi restaurants in Japan are more delicious than any sushi restaurant in the United States, but if you really don't like sushi, please go to a high-class sushi restaurant in Japan. The pufferfish is cut thinly because it is hard. It's delicious for those who have eaten all kinds of fish, but it's not suitable for beginners of sashimi.

@@ASTAROTH_L4M You do need a license. It's pretty hard to get. The track record for restaurants is pretty good, no fatalities in decades, and the last couple of incidents I've heard about are all instances of idiot customers pressuring the restaurant to give them known poisonous parts of the fish (liver, mainly), after which, *surprised pikachu face*, they got poisoned. Other than that, people being poisoned by fugu are almost entirely people preparing it themselves. In any case, tetrodotoxin is survivable with prompt treatment. It won't be pleasant - you're basically just hooked up to machines for a couple days to breathe for you while you're completely paralyzed until your body naturally clears the toxin out - but you'll recover, generally without side effects.

Watching this has really shown me the fragility of life. That pufferfish was still living while it was being cut and skinned, but it just wasn't the next. Its mouth just stopped moving, showing a lack of consciousness. It's dead now. You'll never know what you'll learn at any point in your life, but chance is, it'll shock you just like it shocked me. Don't get me wrong, the chef is talented, and I respect them, but the fact that they didn't at least try to humanely put its light out before they started cutting and skinning really shook me.

The chef plunged the knife in early on, as soon as the fish deflated and before he started cutting it open, he stabbed once firmly severing the spinal column up at the top of the fishes neck. It didn't feel anything after that!

Fugu can be called anything BUT street food. It's a very expensive and dangerous delicacy which can only be cooked by a certified chef.

I’ve had tiger fugu sashimi. It’s very tasty and something if you’re in Japan to try at least once for sure but price wise it’s only worth the price for the fun first time in Japan experience. You can get 3-4 big meals for the same price and a lot tastier stuff too. Not a bad thing though price is because of the huge amount of training to prepare it and somewhat the experience hence it’s just a fun novelty 1 time experience dish in my mind

Japanese people say "Itadakimasu" before eating rice. This is a way of expressing gratitude to those who provide the meal and to all those involved in the cooking and preparation. It also expresses gratitude to God and to all the lives of the ingredients. It is an expression of heartfelt gratitude to God for the life of all the ingredients, including meat, fish, vegetables, and fruits, all of which are believed to have souls. In Japan, it is believed that the soul resides in all things in the forest. After finishing the meal, we say "Gochisosama" (thank you for the food). In those days, it was not easy to buy food as it is today, and people ran from place to place to procure ingredients for their valued customers. Incidentally, "chisou" came to mean preparing meals and other dishes to entertain guests and to express gratitude and respect for their hard work. I wonder if all of you who are criticizing this video are expressing this kind of gratitude at every meal to those who prepare food and meals for you?

This fish (may) not be poisoned. The lethal toxin is apparently not produced by the Fugu itself, but by a bacteria that is ingested by the Fugu in the wild. But if the Fugu is raised in captivity, it doesn't ingest this bacteria, and therefore isn't poisoned.
