For those wondering, Burgoo is similar to Irish or Mulligan stew, a combination of meats and vegetables with a mix of spices cooked slow so the starch of the veggies make it nice and thick. Historically, it was a communal meal, with those eating each providing one or more ingredients to add to the stew.

To me both burgoo and hot browns just make me think of hot pots in a way where its a thick stew and and instead of a certain cuisine style it's what people bring to a gathering.

Corny ain't wrong about catfish. I've had some places cook it just awful. Soggy, limp, flavorless, the breading is falling off...But you find a place that knows how to season it properly and fry it to a crisp, golden brown, then it's heaven on a plate!

Catfish is another of those creatures I can't get past my physical revulsion of the creature itself to ever eat it. Then again, the first time I ever saw a catfish it was just the head and bones some jackass had nailed to a power pole, so maybe that has something to do with it.

The Waffle House in my hometown, amazingly enough, used to have THE best catfish bites. I don’t know if they got it frozen and fried it, or they just happened to hire a great cook, but for about 2 years straight I would go there and order the catfish bites and they never disappointed. Sadly, that Waffle House has long been torn down and replaced with a pets store. Lmao

Hot Browns are an awesome dish. Had one when I went to visit Louisville, KY. It just carries an unfortunate name especially a week after the Tessa Blanchard episode.

U guys should come check out my place in South Carolina. The Tipsy Toad Tavern. I have a fried green tomato appetizer with my own recipe for pimento cheese and bacon jam. Stacked 3 layers high with a maple glaze drizzled on it. All dishes use fresh not frozen ingredients

Out of all the things that "taste like chicken", frog legs are the closest imo. Rattlesnake is too bony, alligator and rabbit are gamier and the texture is a bit off but frog legs are spot on flavor and texture wise. Prepared right they're pretty good. First time I tried them I didn't even know it wasn't chicken until I was told.

Hey Brian, if you are in Cincinnati you need to try Izzy's. The pastrami is awesome there. Izzy Kaddetz brought Jewish Deli food to the Midwest, and did it right 100 years ago.

Tim F Yes it is. Most of the time, it's fucking disgusting. I've only come across one gas station that actually had good catfish, but they only served it on occasion, which probably explains why it was good. They didn't do it all the time, so they had time to get good catfish to fry. Although, catfish is best when caught and cooked yourself.

Here in Oklahoma we live on a lake and our local gas station serves fresh caught daily catfish a few times a week and it is amazing.

On crawfish. There was a restaurant down here that decided to draw customers by advertising "mini lobster". The mini lobster were, in truth, crawfish.

Jim, you mispronounced burgoo. The accent actually goes on the first syllable. Mark's Feed Store is good, but the best burgoo in Kentucky is at Moonlite BBQ in Owensboro. And the BEST burgoo anywhere can be found in Evansville. I love burgoo!! BTW...Roosters wings are major league!
